This place was suggested by a local so we gave it a shot...work crew, lunch break.
In a word, disappointment. IMO the menu is too big for one person to be doing everything. Another review mentioned up to 9 soups a day...thats too much. My coworker had a flat bread chicken sandwich and he never complains, but he said the chicken was dry and the bread was super dry and crumbly.
My Pho was another disappointment. I had to look up the odd, off taste flavor chicken gets, and it gets that from being reheated according to Google. I expected a fragrant bowl of broth and some chicken, with bean sprouts and some sauces to season to taste. I was informed the sauce was already in it, as was the sprouts...note, there was not a sprout to be found.
The off putting reheated chicken flavor, the nearly tasteless and odorless broth, and honestly, it wasn't even a good bowl of chicken soup. I wasn't going to leave a review and that was going to be my kindness, but after returning my pho, she tried to charge us for it anyway, and then made it sound like it was my fault I didn't like microwaved soup stock and reheated chicken. Any Vietnamese person would be ashamed to call that bowl of noodles Pho.
As my coworker said, "I see no reason to ever come back here again."

Their other offerings have felt less satisfying mainly because of the freshly-baked bread, which are a bit too moist and sweet for my preferences. The flavor profiles of the sautéed veggies and banh mi were also a bit off from what I’m used to having. At the end of the day, it boils down to preferences. I get the impression they have a lot of happy frequent customers.
This entire restaurant is run by a single person, from preparing the food to taking care of the tables. Thus, service can be slow. Don’t expect to get a quick lunch. The owner makes it a point to remember little things and goes out of her way to make sure the experience is always a good one. Not only that, but the selection of vegan/vegetarian options on the menu is without a doubt one of the most expansive in Bethlehem which allows people with various food allergies to dine safely and happily.
