UPDATE:
Because of confusion from social media platforms, the staff missed my messages but alas have found them (and many others, apparently).
It is important I update my review to reflect the extreme effort the team made to educate me on the unique nature of these beans and help troubleshoot how to best extract their potential. They made a compelling case that the reason these beans are so dark is likely because of the abundance of sugars from the process, not from being over roasted itself. The roaster went out of their way to give me tons of background and tips. Much appreciated. They also refunded my order AND sent other coffees to try, which was much unexpected and very generous.
I'm stoked to have a bunch more knowledge about co-fermented coffee, my new obsession, and more coffees to try. For full disclosure I'll leave the original text below.
Buyers of their online roasted coffee beware:
This review is for a bag of specialty coffee ordered online. I was initially excited for the strawberry co-ferment beans because the producing farm does an excellent job and I had these beans from another roaster, and they were excellent.
When I received my bag I was dissapointed to discover that they were over roasted. Instead of the standard medium roast that are optimal for natural processed coffee, these were ink black. Burnt. The coffee tastes burnt too and the strawberry flavor is drowned out.
I reached out to them by email and Fb about a potential error of roasting for this batch but havenât heard back. If this is their protocol to dark roast coffee such as this, it would benefit their customers to pivot to medium or light roast ASAP. Itâs industry standard.
If someone would engage I am requesting a refund or replacement of a properly roaster batch. The current batch belongs in the garbage, which is sad because these beans are pricy.

You see, i am from Bryan/College Station and I heard that there was this amazing coffee shop in the Kyle House which is actualy where a friend of mine and then a church member had held their weddings. It boggled my mind a little. I love coffee shops they are their own little worlds a world within a culture of whatever town or city they belong and so this experience was like the begininning of my reintroduction into how has College Station Bryan been doin since I left? Well let me tell you, I walked in no my first experience with Polite was driving by following the GPS and of course the GPS took me a way I had never been before, when you think you have seen it all, and so when I arrived it was a pleasant surprise to see such a beautiful home and mostly that blazing emboldened cowboy hat of a sign that says HEY I'M HERE PICK ME. I was so happy to do so. I parked and was so delighted to get out on a gravel riveway and walk through an archway of Victorian foliage and vinery. What a lovely entrance. The first thing I noticed was a casual student on the porch doing her summer readings. Makes sense. Next I entered. What an experience. The Kyle house indeed is now a coffee house and each room has a theme and the coffees are super boutique like using lavender syrup and freshly roasted coffee made in house and I am all about it. I personally do not drink caffeine however I was graced with the delicious decaf-espresso which ok it does have caffeine but omg so good. Thank you thank you. I found a spot by a window put my tunes on and went into focus heaven. The decor is classy trendy modern. I highly recommend the spot.    Read moreEvery few weeks, when we'd drive by, I'd mention, let's check out this place sometime. Welp, 2+ years later, we arrived. I'd read the story about Steve and his detailed approach with roasting and excitement to open the shop, while bringing on board just as dedicated a staff. i couldn't wait to support such an endeavor, and finally the day came. Absolutely adore what they've done with the interior, keeping it as original as possible, with the possibility of more quiet areas to work, chat, enjoy the ambiance of the home. The friendliness of the staff superb, the lil sign that says something about ask questions, i read that after i inundated them w quite a few already, hehheh I bought 2 bags of beans. Enjoying 1 of them currently as i write this (well, the coffee made from the beans) and as i enjoy my pour over, with water reaching just 140°, the fragrance is divine, the subtle sweetness tantalizing, brought to me from Rodrigo Pelåez (Columbian). I've not delved into the Mache Estate (El Salvador) as of yet, but I'm certain I'll be just as pleased The 4 stars though? Sadly, they use a microwave. I enjoyed an Americano on our visit, was shocked to hear a door open and looked to see they put in a cup with a filter. Was that my drink?
