First of all, I love food trucks/stands and all variations of them which this is one. I'd driven past Potato Island multiple times with intent to stop by some day and now that I have eaten food from them I am livid with myself that I didn't stop sooner. I am a sucker for good potatoes (aren't we all, amirite?) so I was already excited, but imagine my delight when I found out they also serve loaded nachos, fries, sweet potatoes and sweet potato fries along with the classic loaded baked potatoes. What I lack in self control I make up for in my absolute adoration of food. So instead of just getting a potato I went ahead and got loaded nachos and fries too. I am going to be eating food from this order for at least 2 days, their portions are MASSIVE and I am here for it. I will sing the praises of Potato Island for all the years I have left in this life and I'll absolutely tell my grandchildren one day about the heaven that is Potato Island. Everything was prepared excellently, the food quality is fantastic and oh so delicious, and I feel the need to drive home the point of portion sizes that will have you ready to slap ya momma (momma not included in the purchase). They carry a multitude of toppings resulting in a vast amount of combinations, but rest assured for those who may become intimidated by all those options they also have quick picks with something for everyone. The cashier was so friendly and kind, and she walked me through the menu to ensure I understood the ordering process and potential additional costs. The cooking staff was focused on their job and everything was prepared in a timely manner despite my order being bigger than what I saw others buying. It was made clear to me that everyone on site was a veteran of the industry, working that efficiently and presenting an aesthetically pleasing dish that is outshined only by the incredible taste of the food does not happen by accident. I recommend everyone to stop by and see these saints among men and grab some lunch.
