Their specialty is broken-rice dishes and they do it very well. I always get it with shredded pork skin and Korean beef rib (Cơm Tấm Bì Sườn Bò Đại Hàn) and have never been disappointed. Broken rice offers a textural variation more than flavorwise so the soft pork rinds add a heap of both.
The crosscut Galbi ribs are drizzled with savory green-onion oil and fried shallots. On the side, some cucumber and pickles (Đồ Chua, the familiar daikon-and-carrot mix along with cabbage) are more than just a garnish and impart a crunchy zing. Accompanied by blended fish sauce (Nước Chấm) and a small—insanely hot—Thai chili pepper, the flavors meld kaleidoscopically, ringing totally authentic.
I usually also order the grilled pork sausage roll appetizer (Nem Nướng Cuốn) which, along with the entree, fill me up for the rest of the day. Like regular spring rolls (Gỏi Cuốn) they come wrapped in moistened rice paper and need to be eaten immediately before it dries out stiff. In addition to the veggies you find in fresh spring rolls, there is a surprise crunch provided by fried wonton wrapper. Dipped greedily into the cool peanut sauce topped with chopped, roasted peanuts and a dollop of sriracha, the warm meat is a counterpoint in temperature, taste, and bite.
