Mi Mexico Lindo — Restaurant in Carbondale

Let me start by getting the only kind of negative thing I have to say out of the way... The atmosphere here is not bad but its not great either, it's okay. It's an older smaller building and it's dimly lit. Not really the owners fault as they'd need to do a decent amount of work to spruce the place up a bit and they JUST opened so I don't blame them at all for that. Something that I do hold the owners accountable for though is how darn good the food is. I love Mexican food and usually always have to drive 25 minutes to get my favorite Mexican food but now I don't even need to drive 5 minutes and the food here is even better than my usual place! They have great portions, great food that tastes like it's home cooked, great dessert, and great service/friendly staff! Restaurants in this building never seem to have a lot of luck so please give this place a visit if you get the chance! I'll do my best to keep this place open single handedly...

This place is soooo good! We finally got over to Carbondale to try it, and just wow. Definitely one of our new favorites. My Dad said it's the best Mexican food he's ever had in his life. Huge portion sizes for good prices. Their combination special platters are an especially good value. I got three gorditas, two empanadas, and Mexican street corn—all of which was insanely good—for $12. My dad got the nachos mixtos, and my mom got the birria tacos. Both were huge and equally delicious. Desserts were amazing too. The flan, especially, is a must. I've honestly never been crazy about flan before, but this was on another level. The custard was so thick and creamy. Also the place was so cute, and the employees were super kind and attentive. We're not usually big Google reviewers but felt this place deserved a shoutout. If you've not gotten around to trying it yet, definitely give it a shot....

Where do I begin! My brother turned 50 today and is living alone in Carbondale PA and unfortunately since I live in Texas we could not celebrate in person. Weekly, when we chat I receive a text from him with a pic of his favorite dish from Mi Mexico Lindo. He raves about their amazing food, enchilada dish and great service. I knew he would be ordering his favorite dish today. I called the restaurant requesting if I could pay for his food and if they could also sing happy birthday with a cake. They agreed and added a candle to a Flan since they did not sell cake for desert at the moment. When he walked in to pick up his order he was surprised with the flan, a birthday candle and they all sang “Las Mañanitas”. 😃The best part was they even FaceTimed me! I am forever grateful for making his 50th Birthday special....
