I have definitely gained a few pounds since Jazzymn opened partly because I only have to walk next door but mainly because I love quality baked goods, the result of being married to a Swiss pastry chef for 12 years and having our own bakery. So my point of telling you about me is to illustrate that I am very hard to please! So here we go, oh my! oh yes! hallelujah! This 5 star review is for Jazzymn, the owner of Wilder Bakeshop and a REAL PASTRY CHEF! She makes awesomeness here in Chama. She only uses quality ingredients and creates heavenly delights. She is a truly talented baker. This career is not easy folks, take it from someone who knows. Early hours, hard work and knowing the chemistry of baking. Jazzynm conquers all while looking like she never lifted a finger in her eclectic cool style minus pastry flour makeup. Her eclectic cool style is also transferred in the cozy atmosphere of a hang out coffee shop. All the remodeling she did herself with the help of her friend Peter. Saltillo tile with French blue and white title accents, What? It’s super neat! This is the new gathering place in Chama. There is nothing I do not like to savor here. Her individual pecan pie is incredible. Today I picked up an order of a dz coconut macaroons made with fresh orange zest! Crispy crunchy on the outside and moist and chewy on the inside. The croissants are buttery deliciousness. My favorite savory choices are the ham and cheese croissant and the ham & green chili quiche. Lastly all the lovely ladies working here are friends and super nice. I’m a HUGE FAN! I still think that I will wake up. All this scrumptious, down to the last bite, goodness never happened. But the tire I carry now around my middle reminds me this is real in Chama. Go every day early for the best selection except Sunday and Monday when they are closed. Read moreI am very sad. I have been living 20 minutes from this shop for a year and a half and I just discovered this treasure. I am sad because I am moving back to the East Coast and had the opportunity to enjoy this place as a regular, but I’ll have to live with having gone just once. I had a green chili quiche - not long after opening, so it was still nice and warm. The filling was great, but the crust was outstanding. I had a croissant - buttery, flaky, light, and very tasty. I also had a sticky roll - the sugary sauce was delicious, the roll had a perfect chew. And one more - I am not sure what it was called, but it was in the shape of a piece of thick bread with blueberries all over and I suppose a custard type texture. The corners were chewy and scrumptious and the middle was velvety and rich. Also, the coffee was great - I just had a black drip, but they have a serious espresso machine as well.

The owner, and only employee, is super friendly and I thoroughly enjoyed chatting with her. The first pastry I got consisted of an exquisite honey and goat cheese filling nestled in a crisp, light, sugary, pastry shell. It was as good as any pastry in a small, quaint, French village. So I had to order another to go, along with a piece of blueberry almond coffee cake. The owner bought the building two years ago and is fulfilling a childhood dream of bringing world-class pastries to a small, rural town in northern NM.
