This place is AMAZING. First and foremost—the food. It’s absolutely incredible. I’ve been three times, every time I’ve tried something different, and everything has been phenomenal. The “chicken” parm sandwich, the belissimo sandwich, the lasagna…it’s all so good. Then there’s the pesto (wow!), the cannoli dip, and last but not least, the homemade fresh mozzarella. I’ve never ever liked vegan cheese, but this one is a huge exception. If you’re a vegan who misses things like chicken parm and club sandwiches, go here. If you’re a vegan who likes knowing that your food is made from actually healthful ingredients, go here. If you’re a person who’s really picky about your marinara sauce, go here. I love finding new ways to eat foods I love but in plant based form. It’s sometimes hard since I love cheese. I also haven’t found a great vegan restaurant yet. Three Girls on Spring has fixed both issues for me. This restaurant totally gets plant based right. I’ve lived in LA, Seattle, and Boston. All of which have great vegetarian and vegan options. Three Girls on Spring is better than any I’ve ever been to. The other benefit is that they make spreads, cheeses, and other items you can take home! One of my four year olds DEVOURED the caprese sandwich, and my other four year old did the same to her strawberry nutella (their version made in store- better than real nutella somehow) sandwich. Elijah was a delight to talk to and had my order of “chicken” parm ready in no time. The portion was large enough for someone with a big appetite and probably enough for 2 meals for a regular eater. The cutlet was tender, flavorful and perfect. The vegan cheese combined with the red sauce on a light, but thick flatbread created an amazing combination that will make you forget that you are partaking in plant based food. Those in this community are so fortunate to have this eatery and my only regret is I was only in town for 1 day and didn’t get to try more menu options.
