Okay, although I appreciate trying new concepts, this doesn’t work for me. There is no way in the world this restaurant would deserve 5 stars. I guess the owner has many friends. There are certain things that are best left alone. For example, salmon sashimi should not be soaked in a lemon sauce that completely removes the delicate flavor of the fish...and if they want to do hand rolls, please pick a nori easier to cut with your teeth. The sashimi is butchered very thin and folded. The food does taste fine and the fish is fresh, the service isn’t great but the people are nice and they do have great sake, beer and whiskey choices so they get 3 stars instead of the 2 I was initially planning on giving this restaurant. Read moreI'm going to be as fair as possible. I have no idea why anyone would eat here. Compared to any Sushi restaurant around, the food is more expensive, the portions are much smaller, the quality is worse, the service is mediocre, and the vibe is super sad.
The hand rolls were tiny and underwhelming. The tuna in the handroll was clearly old while the tuna in the sashimi was fresh. The wasabi was dried and hard. The sashimi cuts were extremely thin. The miso soup had a piece of seaweed on the side of the bowl as if it was used as a ladle for a big pot.
It was so disappointing that we left hungry rather than order more. This is the very definition of a 'concept' restaurant run amok - clinging tightly to an idea while ignoring the reality that there is no value for the customer. Save yourself the experience and go to a real...

I came with a friend a while ago to check out Cherry Hills Sushi.
The restaurant is small with mostly counter spots and a few tables.
The servers were helpful as I had never been here before.
I tried the six handrolls and it was all tasty. They are made to order and the quality of the seaweed, rice and fish/ingredient is really top notch.
They premium wasabi is definitely a notch (or several) above the normal green paste you get when eating sushi.
The miso soup was flavorful. It wasn't better than other Japanese restaurants I went to but definitely a good way to start the meal.
I tried one of the Japanese beers that you don't see at every other restaurant. It was a darker beer and sadly I forget the name.
