Kyran Tompkins, the restless mind behind Wiltwyck Spirits Company, isn't chasing praise or recognition. He's pursuing obsession. Behind the bar, a polished custom draft system, adorned with backlighting. Every single aspect of the space from the bar stools to the tile floor & custom stonework were carefully curated for form and function in mind.
Though on the other side of that wall, a workshop that is a stark contrast to the artful tasting room.
You see, Tompkins isn’t your average distiller. He’s a tinkerer, a renegade scientist with ink-stained notes piled chaotically, splattered notebooks filled with barely legible recipes, and the machinery he personally hacked together from multiple pieces of repurposed equipment and stubborn ingenuity.
He speaks quickly, passionately, almost impatiently, like someone who knows he’s onto something extraordinary and doesn’t have time to waste convincing the skeptics.
His first release, a vodka. It’s revolutionary in a quiet, understated, almost defiant way. It looks unassuming in its simple short glass bottle but tastes cleaner than anything on the market with a texture that can only be described as "full."
