Ricky's Island Cafe — Restaurant in Colorado

I've been wanting to try this food truck for awhile now, and saw they were located in the Big R parking lot for the food truck fest in Fountain today. It did NOT disappoint! My husband and I wanted to try a couple different trucks so we only got the jerk chicken tacos; but after trying it... I honestly regretted not just getting our entire meal from here. It was one of the best things I've ever eaten. The chicken itself was perfect, the mango/cucumber on top was to die for. Even the tortillas were perfectly cooked! I'm not a big fan of pumpkin anything but we at all of the pumpkin rice as well. My husband and I were damn near fist fighting over the plate in the parking lot 😂 Not only that but the owner's were just the NICEST people. Absolutely delicious food and huge portions at this food truck! Only downside is the prices recently doubled (but the sign has no prices, so you don't find out until it's time to pay). The pork fries went from $10 to $20+, which comes to almost $30 after tax/tip.

This food truck has really good food. I visited on a Monday evening when the truck was located right outside Goat Patch Brewing.
