A lot to unpack here.
My daughter ordered a Southwest Chicken wrap. She says the wrap was well structured and the flavor was there. It had a satisfying crunch and the chicken wasn't dry. Her main complaint is the lack of corn. There was no corn in the wrap and the "corn salsa" had, 3 kernels (it was mostly all tomato) and no flavor.
The mac and cheese she ordered as a side (3 dollars upcharge) was n't a big portion and the taste wasn't there. It was kind of bland and and not worth the upcharge.
What happens when there are 2 or 4 patrons at the table when they order pretzel sticks. Only 3 sticks for $12.88. I know you are a brewery and that's your thing. The beer over powered the cheese. Had a dry/bitter after taste. Maybe a stronger nacho cheese is needed to stand up to the beer.
My wife ordered the pulled pork sandwich. Reading is also a skill on our part. A typical pulled pork sandwich would have smoke flavor, bark and not drowned in sauce. It came out as described not what my wife envisions a pulled pork sandwich should be. That's on us.
Your dish was braised in beer and tasted like it. Pork has a mild flavor, lagers are sharper. The beer braise over powered the pork and could not taste the pork. The caramelized onions did not help and maybe needed as a topping for flavor and texture. Now let's discuss texture. The pork was Gedempte (over cooked, mushy, lacked flavor, did not have a good mouth feel and suprisingly dry for something cooked in liquid). It reminded me of a Sunday pot roast consistency. (Not in a good way) Pulled pork should have some integrity. My wife did not eat the sandwich at all.
I ordered the Windy City Burger. I enjoyed it. It's a smart dish. The mozzarella really held the sandwich together and could have been much messier. The ghiadinara had right balance of acidity and heat. Only issue is the amount of Italian Beef. It felt like it was like when there is bacon on a burger. Just a couple of slices. The beef was very good and I would order it on its own.
Only 1 side with main dish is considered a base side with no upcharge. That's absurd. There should be more no extra charge options; seasonal vegetable, baked potatoes, rice pilaf. Any swap costing extra appears to be a cash grab to me other than the fries.
Fries were crispy and tasty. Across the board universally liked.
I WAS CHARGED 50 CENTS FOR A SMALL CUP OF BBQ SAUCE TO DIP MY FRIES IN. THERE IS NOWHERE ON THE MENU THAT BBQ SAUCE IS 50 CENTS. ITS AN CONDIMENT FOR BLANKS SAKE. Yes, I meant the all caps.
Service and pacing was good. Drink refills were timely

I know they are supposed to be known for their burgers, but I think that the burgers at River Street Tavern are actually way better. Here is why I say this. I ordered their DC Cobb burger, I am not sure I would enjoy one of the burgers with chicken tenders or Italian beef on it, just a good old burger is what I was going for and this was the closest thing to that. We arrived today just after noon for lunch. We were created outside by a couple of pleasant ladies and were brought to our table straight away. After sitting at the table for what seemed like 5 or more minutes our server decided to come over and bring us some menus. After another 5 minutes she came back and took our drink order. Once those came back after about 5 more minutes she took our food order. On to the food, my daughter ordered a wrap with a side of mac and cheese. Honestly the wrap was delicious, and the mac and cheese were great. Now the burger on the other hand was not as good as it should have been. I ordered my burger medium rare; it was fully done no pink in the middle at all. It was supposed to have cheddar cheese on it, it was missing. The patty was not seasoned at all, and there was no salt or pepper on the table for me to take care of that myself. If it had that great grilled flavor, it would have been better, obviously it is cooked on a flat top. I would have mentioned this to our server, nut she was nowhere to be found and other staff never checked on us until we were finished without meal. Sad to say this, but I think for a place that is supposed to be known for their burgers, should have the best burger in town. There are at least 4 other places in town that I can spend my money at and have a better burger. I try to support local businesses as much as possible. I would probably go back for something other than a burger as it was just ok. I really do hope that the management listens to the feedback of these reviews. I would like to think that the next time I visit the burgers will...

While it may not be obvious through my username I created in fifth grade, my name is Max and I was a formerly employed barback with DC Cobbās. I worked there for around 6 months and I can say with complete certainty that for a majority of the time it was entirely enjoyable. The only complaint Iād ever make was the management. That being Julius and Luba. I say this in complete truth and confidence only because they have blocked me from communicating any other way with them (eg. Facebook, iMessage). In the time that I worked at this East Dundee location Iāve dealt with countless emotional and hurt employees who had been verbally insulted by the management team. Iāve dealt with a countless number of incidents of new staff members quitting purely and solely because of how the management treated them. While this is all bad on its own, the thing that really hammered the nail in my coffin with management is their hiring and continuous support of an employee with known pedophilic tendencies and actions. I had alerted management as soon as I found out about who this man was and mentioned the things he had been trying to do. Being the main manager, Julius shrugged this off and said that if it happened again then he would be gone. After a stern talk, Julius continued to employ this man a full month after the unofficial allegations had surfaced. While I would normally not mention this under a public forum, I felt that this was the only way my voice would be heard. I appreciate anyone that chose to read to the end of this and even moreso to those that see the flaws and errors that need to be addressed here. Please donāt send any hate to anyone that works here, DC Cobbās has some of the most warm and welcoming people Iāve ever met in my life employed there. The managers are the only issue...
