Caroline’s Dessert Truck — Restaurant in Eagan

This dessert stand is a pop up location that is seasonal from late May through October. They sell the most delicious strawberry snacks for a modest cost like strawberry cupcakes, strawberry and cream cups. They also sell shaved ice, iced coffee, and hot chocolate (September and October only on the hot chocolate). Nice owner who I met a few times over a year or so, and he should know who this review is from? Hint: The disabled veteran that rides the big red power scooter. (see pic) ;)

This operation started about 2 years ago at the Twin Cities Outlet Mall. I met the owner when he first opened, and he told me that they would only be there at the location for a couple of weeks in 2023. Low and behold he has been at this location for about 2 years or seasons now. Glad he took my advice about coming back. With that said.

Wow! We got an ad on instagram and needed to check this place out. My husband and I got strawberry limonades, tres leche cupcakes and the strawberry and cream cups. It was all divine! The cream on the strawberry cups was unique and not a traditional whipped cream. We couldn’t pin point if it had mascarpone or cream cheese in but loved it regardless. The Nutella in the strawberry cups was so good and honestly my favorite part.

I don’t think I’ve had much exposure to tres leche cakes in the past but my husband and I both loved it! The little fork that came with it was not only handy but adorable.

The limonades tasted fresh and were nicely tart.

Overall we enjoyed the experience and will gladly recommend and go back. They were located at the outlet mall right by the food court and the main walkway from the parking ramp to the center of the mall. Definitely give...
