4.5 - A new pizzeria in Old Town Fairfax City is open and waiting. Should you make the trip or stop in? I visited the restaurant today. Let me say, that if you cut me open... you will see pizza. I LOVE good and great pizza. So I am snobby about this food. First thing observed is the staff are warm, friendly and inviting. The pizza is available whole or by slice. The dough and sauce is made fresh in-store. No bricks or coal here. Traditional pizza ovens running at 550 - 575 degrees. The mozz is fresh, mild and melts to very gooey, nice. The sauce at first taste is very subtle in taste and spice. I ordered pepperoni so the spice was more elevated in kick from the base sauce, again, nice and needed. The crust was soft and tasted like a great fresh bread. The undercarriage was great and added needed texture, some crunch. The pizza itself was undercooked a bit. The cheese was melted and white, no yellow or browning to the cheese. The crust edges were cooked but under done. Lacking color and proper crisp. I ordered well done, but it came lighter than standard cook for pizzas. The flavor/taste was very good. The price is a tad on the high side, but is worth it. I ordered the grandmother style (square) and received 4 slices. It was approx 7" x 7". Make sure you order well-done. They have a patio to sit and people watch or overview the city center park. Read moreTASTE (4/10): Tried 3 slices, liked none. The thicker one was slightly better. And yes, I traveled quite a bit just for this, all in the name of pizza devotion. I also tried cane Cola, it's good though.
PRICE (9/10): Very affordable. You can’t even be mad at it. You paid peanuts and got… well, something.
SERVICE (7/10): Almost fast—under 10 minutes. Staff are young, which is cool, but the girl at the register seemed like she was decoding an ancient language while I was talking. Felt like I needed subtitles.
ATTITUDE (7/10): They’re fine. Not rude, not overly warm. Just doing their thing.
PLACE (8/10): Clean inside, seating both indoors and outside. No parking nearby, but you might strike gold across the street.
CLEANLINESS (8/10): Surprisingly tidy. Points for not being sticky, smelly, or suspicious.
ADDITIONAL FEES/HIDDEN COSTS (10/10): Zero hidden surprises. And they offer George Mason student discounts, so that’s a bonus if you’ve got the ID.

I ordered a pepperoni grandma style slice, huge size rectangle slice, and did a subjective assessment of their pizza. First, they use the good quality pepperoni, not the usual cysco stuff at all. The cheese was also good quality cheese, not greasy and a good amount of cheese. The crust was thick and had a good taste. I also liked the taste of their pizza sauce. Not enough sauce for my taste, but when I told them, they said I can just ask them to make me a slice with more sauce next time I eat there, and that completely sold me.
