We are beyond thrilled that there is a new and exciting Mexican restaurant! And we love that it is close to us in the village of Ridge Manor! LOL My Fab One and I have already been twice, in as many days! Our first visit I utilized my tried and true method of a fair evaluation/comparison of a Mexican place. I order Guacamole, in addition to testing out the salsa. Then, I go for that classic, a Chimichanga! By doing this I am leveling the playing field on each restaurants' ability to hit the mark! Bam! El Sol De Mexico hit home runs on all counts! Their salsa is just as it should be. Plenty of tomatoey good taste, with chunks of goodies and a cilantro note. DEE-licious! Bam! Their Guacamole Mexicano took a while to come out. That's because they make it to order. It arrived in a molcajete(mol-ca-het-tay), or mortar and pestle to you and me. It was thick with nice chunks of avocado, tomatoes. It worked beautifully on the chips, and as an addition to my entree. Speaking of entree....BAM!!!!! The Chimichanga was DIVINE! Heavenly! Excellent! Ahhhh-mazing! It was the perfect size, filled with luscious chicken and OHHHHHHH, that gooey white cheese! I LOVE that gooey white cheese and THIS cheese was PERFECTION! THE best Chimichanga I believe I've ever had! YES! Fab One ordered the Street Tacos. She absolutely raved about them! And I'll let you know she makes a pretty incredible Street Taco at home. SO, this praise means a lot! On night number 2, Fab One went right for another round of the Guacamole Mexicano, along with a bowl of Chicken Tortilla soup. And she added a side of beans & rice. Oh yeah! I ordered the Carne Asada. Loaded up with tortillas on the side, and plenty of guac, sour cream, tomatoes, etc it was pretty darn good. Not the best I've had, and I was surprised at that. But it was good. The weakest link for us both nights was the refried beans and the rice. The beans could have used a bit more salt and cumin, garlic and oil. The rice was a bit bland. I'd like to see them offer a nice white cilantro lime rice, always a hit! Service was STELLAR! Our first night we were well taken care of by Maria. She was awesome! Second night we sat at the adult area(the bar, just for comparison) and were ably handled by Victor! Based on the parking lot, the folks traversing in and out and certainly the excellent pricing, the colorful and large portions I'd say Ridge Manor just went South of the Border! Big time! Congratulations and Let's Eat!

Such a nice casual restaurant near the Days Inn in Brooksville. It was located in a strip mall and was walking distance from my hotel room. Didn't need a reservation and was seated immediately upon walking in. Before even ordering, was given some complimentary chips and salsa. For my drink, went with the presidente margarita (9 dollars). It was surprisingly strong, but still refreshing and a had the right amount of tartness too. For my entree, I went with the enchiladas Verde (9 dollars). I would give less stars if I could. We live over an hour away and drive out of our way to come here. Today we drove out of our way again just to eat here, and thats what makes our experience even worse. Our server Miranda had to be the worst sever we’ve ever had. She took our drink order, and we were in a bit of a rush so we ordered our food right away. She walked by multiple times before bringing us our waters probably 10 minutes after taking our order. I asked for Cholula or Valentina when we ordered our food. When she brought our drinks out I had to ask her again for hot sauce. She brought me what I assume was their house made hot sauce, and I asked again if they had one of the two I was specifically looking for. She came back with one I had never heard of before and said that they don’t have either. I then look to my right and saw there was literally Cholula on the table next to me. I was upset with everything that had occurred, but I get things happen…until my meal was wrong. I have lots of health issues (such as being allergic to lettuce), so my order is pretty unusual. BUT she repeated it back to me multiple times. The bowl came out completely covered in lettuce which is the one thing I literally cannot have. I didn’t have time to wait, so I had to pick out the lettuce (which was nearly impossible). She clearly realized we were upset because she was very short and avoidant towards us. My mom has been a server my entire life so I’m usually against stiffing, but in this instance we left no tip because the service was absolutely TERRIBLE. We're local to El Sol and have been there many times. We have attempted their to-go service in the past with little success. I ordered a meal I frequently get when dining in. When we got it home the meal was completely different. I called them up and they originally told me that I received the right meal, which I knew was incorrect because I order it frequently. When I explained the meal I ordered and the meal I received they said I must've not ordered the right meal...Again, I order this almost every time we go. They would not accept any responsivity. I chalked it up to a mistake and we continued to eat here. Recently we had a larger group that we were buying meals for. We needed meals for 12 people. I called 3 hours in advance to let them know the order and gave them a pickup time. When we showed up to get the food they said they had no record of my order at all. They said I called the wrong number. I showed them the call in my cellphone and the length of the call (6 minutes) they insisted that I was mistaken. I spoke to a gentleman when I originally called, we went over what I wanted, the sides, extra tortillas, sour cream, etc. Upon arrival they pretty much said I was mistaken and must not have placed the order when I called and talked to them for 6 minutes. Mistakes happen, I understand that. This place made me feel like a fool, they do not accept blame and instead place blame. Very...
