I like what they've done to the place. Way more aesthetically pleasing than Tiger Sushi. The service was prompt and friendly while still giving us space. They give you a pump of sanitizer before you get a menu, so that's cool. I have an MSG hypersensitivity, so while I'm not usually picky about it, I can still have negative reactions when I consume too much at once.
Good - their fried egg rolls are crunchy and light, their herbs are fresh, the service is pleasant, their establishment is very clean and well-lit.
So-so/not great - I've had many bowls of pho in my life, and found their #1 special bowl to be lacking when it came to the broth. I could sense that most of the flavor comes from a pre-made seasoning. That's fine, but it lacked an overall depth that excellent pho broths have. The color was light despite being a beef pho and was reminiscent of chicken stock. An excellent broth needs more cooking time to develop the depth and richness this particular broth lacks. I understand that they're new and how difficult it can be to mass-produce pho broth that is intense and rich while remaining profitable. The mi quang was...a tad non-traditional in the sense that the noodles were not the vibrant yellow that they should be. The protein was very well-seasoned, but the seasoning made my throat scratchy for a few days after. The sweet tea could have been stronger and sweeter. That's an easy fix.
Overall, a nice place that just needs to tweak their process a little bit more to take things from good...

I had the special beef bowl (small) broth was good, not too strong or salty. Meat ingredients were cooked nicely, nothing chewy. Noodles seemed fresh and cooked perfectly. Fresh veggies on the side to be added at diners discretion. A good bowl of Pho. Beware the garlic chili oil, it has a kick, in a good way. They also sell it by the half pint to go. We split a Vietnamese coffee, very nice. Strong bitter upfront then you get the sweetness from the chocolate and milk. Good drink (served over ice). Wife had the vermicelli with grilled pork. Pork was seasoned well and very tender. Noddles also cooked perfectly. Sauce on the side was tasty(a thinned down version of sweet chili sauce). Very nice staff, helpful and pleasant. The cook came over and explained how to use the chili oil and soy sauce to add to the pho. Very kind. We will return to make our through the menu. Staff was super friendly, ingredients are fresh and of high quality, and I consider it good value for portion size. It’s fast casual, which is kinda ideal for this type of food. The beef was lean, broth, flavorful, and toppings were of perfect portion size. In comparison, the place yesterday (I wont name, but it’s on Bayou) was more like a Moe’s than the great cafe vibe of Phǒ Real. The bahn mi was absolutely fantastic! If you like sandwiches, you will love it. If you like bahn mi, you will appreciate the fresh and bountiful ingredients, the flavor depth of the pork, and the absolutely perfect bread, with a slight crust and perfectly soft inside.
