This is the OG taco spot in Fort Worth. I've been coming here for around 20 years, give or take. They do one thing, and one thing only: Al Pastor. They've absolutely mastered it, the spices and the texture of the pork is like nowhere else. Most other spots in Fort Worth are just not good, you'll get a gamey, possibly expired pork flavor that I just don't play around with. But Guajardo's has never had that issue. The fact that there really isn't any competition for them shouldn't give you the impression that Guajardo's is merely a big fish in a small pond though, or that it' only the best by default; this place could hold it's own with any taco joint in America, possibly the world. I know, cause I've been all over it. After a decade of visiting every inhabited continent and nearly 40 countries, while sampling whatever passed for tacos there, I can say with complete confidence that Guajardo's is the best I've ever had. Followed closely by a place in Dubai, but that place flies in world class chefs from Mexico to recreate the cuisine there and Guajardo's STILL has them beat! The beans, which most places barely give a second thought, aren't just a sideshow here; they're a staple. A cure-all, if you will, that could remedy even the mightiest of hangovers. Coupled with the entire sauce bowl full of limes that they include with your meal and just a spoon full of the red salsa, it's absolute magic. Now they're meat tastes exactly like the pastor meat you buy at Super Mercado Monterrey which is already pre marinated and too damn salty. They're Frijoles a la charra are still pretty damn good though. I wish they would go back to cooking their meat the way they used to cook it. I was apprehensive at first, but when I took a bite of the torta, it changed my perception. Food comes out hot fresh and delicious four stars and not five stars because they are not cooking Al Pastore the traditional way. Excellent service I would highly recommend torta and Charro beans.
