Chidori Sushi — Restaurant in Fountain Valley

First of all, I must say that I have been to MANY sushi bars in MANY states, and Chidori Sushi is up there with the very best. In fact, maybe it does tie for first place. The fish is extremely fresh. The menu has plenty to choose from but is not filled with a bazillion choices. This helps to ensure freshness of the fish. The sauces are comparable to those found in fine French cuisine. Delicate yet deep in flavor. Perfectly made to perfectly complement the sushi roll which it is served with. My husband and I were wowed, impressed, and thoroughly satisfied with our rolls and sashimi and spicy garlic edamame. Our Waitress Laney was bubbly and knowledgeable. We loved her! You must try this place. P.S. the rolls are made in bite sized pieces. Wonderful! Also approximately priced. This is a small, hole in the wall sushi place. You wouldn't expect to find some of the better sushi you'll ever have here, but it is fantastic. The prices are absolutely reasonable as well, if not outright cheap for freshly prepared sushi of this quality.

I ordered Chirashi. Miso soup was served first. The soup was excellent. Far above most miso you get with sushi, clearly not an afterthought here. The Chirashi was served in a bowl, as is standard, with 12 (IIRC) pieces. I could wax poetic about the quality of it, but suffice to say it was EXCELLENT. The rice bed was your standard vinegar rice.

Front and back of house severely understaffed. Chef works very hard and interacts well with guest. Prices are very reasonable too. However it took a very long while to receive order and bill. (This was on a Friday night)

This place is very casual and no frills. Because of the short staffing, plates aren't presented well and the fish isn't as precisely cut as other restaurants. Don't expect anything beautiful. However, the rolls do taste good only due to them being absolutely drowned in sauce.
