Man, I honestly really wanted to give this place 5 stars, but I just can’t bring myself to do it…

Just went today for the first time (after trying to plan to go for months!) and drove down/arrived 20mins prior to open, was about the 25th person total in line. Made the plan to just take off work at this time and go, because they said they’d have smoked pastrami. I waited in line for an hour (not the problem) but when I finally went to order, I was told that I could not order the pastrami inside the restaurant - it could only be ordered outside at the food truck. Even though apparently they had popped up “inside” the restaurant, just the day before? It would have been nice if an employee could have indicated this to any potential first timers as we entered. When I walked out to the food truck at that point, I was told they had already sold out of the pastrami.

Anyways, I ended up grabbing a single beef rib, brisket, and some sides instead so I wouldn’t leave empty handed. Beef rib was pricey but delicious. Highlight of the meal. Would order again for sure. Brisket was…..fine. I asked for the fattiest cut they would give me, so I assume it was the Wagyu? Not entirely sure since they didn’t specifically say. Either way, I personally find the moist brisket at Rudy’s to be better. Maybe I caught them on an off day, but I wouldn’t rush to order this one again. Cole slaw was okay, nothing special to it. Would not order again. The elote was ice cold and nearly flavorless. Would not order again.

Overall an up and down experience with the food, and a severely disappointing experience with the lack of communication about how and where specific items are to be ordered. Beware that if you are alone, you will likely have to choose between getting only what you want inside, versus getting only what you want outside.

Hopefully in the near future they can create a system where those who have waited in line order what they want upfront from the truck as they enter the restaurant, so they are not at risk of losing out on those items...

The food seems delicious but the service wasn't there for me. When I go I always get there around 2 and what I want to try is always sold out so it must be a good thing to get. My 3rd attempt was today and I put in a preorder. Well I tried to at least. I followed the number that was provided on Facebook. First it sent me to a Whatsapp app that it wanted me to download and didn't like that like another app on my phone to try something. They provided me with a text or call number. Didn't get a reply back that the food was ready, I called 3 times and no one came to the phone. Feel like it's definitely a first come first served place even after putting in a preorder. Really sad about this honestly and wish I didn't have to leave a review like this. I hope no one has the same experience as have because the food seems delicious. Don't want to post the pictures of conversation because I don't want to be put out in social media like the last person that left a bad review did...if I read what that person was saying correctly on their review. All in all seems to be a highly recommended place but I would just go in person and get there as soon as they open it seems. After my experience I'll look away from here for a while. If the owner would like proof of conversation I have it. Just ask.

Edit review: We got the prime rib and it was delicious. My daughter loved the desert as well. I gotta say this place is delicious and I highly recommended. Better than these chains around town hands down. Thank you for the amazing food and service. Can't wait to be back again. The owners are awesome people as well and made up for everything....

A Hidden Gem of Flavor! A Original Great Taste Barbecue That Hits the Spot Tucked away like a well kept secret, this barbecue joint isn’t just another place serving smoked meats it’s a full-blown flavor destination. The name may not be splashed across billboards, but once you taste what they’re cooking, you’ll be telling everyone you know. What makes this place stand out is the originality. While some places copy the classics, this restaurant redefines them. Their signature barbecue sauce is like nothing I’ve ever had before perfectly balanced with a rich, smoky base, just a touch of sweetness, and a subtle spice that sneaks up on you in the best way. The brisket was the star of the show meaty, tender freaking delicious! Each bite is a beautiful mess of flavor, savory, and satisfying. You can tell they’ve spent serious time perfecting their meat it's not just food, it’s a craft. Their brisket deserves its own spotlight. Sliced thick with a deep smoke ring and a melt-in-your-mouth texture, it's packed with flavor from bark to center. No sauce needed but hey, a drizzle doesn’t hurt when it tastes that good. What really seals the deal is the vibe laid-back, welcoming, and clearly run by people who take pride in what they do. They don’t just serve barbecue; they serve up a feeling of home, with every plate carrying their unique fingerprint of flavor. If you're looking for delicious, original, and great tasting barbecue, this spot nails all three. It's not just a meal it’s a memory waiting to happen. From one Texan to another! Job well done! Hell...

Replying to @Jaden Hammond You ever find a food spot so good you lowkey don’t know how you’ve missed it until now? 👀 That’s how I feel about Chuck Wagon 719 on the south side of Colorado Springs! It’s one of those hole-in-the-wall gems you’d never notice unless you were looking for it—and that’s part of the charm 🧲 Locally owned. Everything made fresh. No fluff. Just fire Texas-style BBQ in its purest form 😋 We went all in and tried: 🥩 Brisket 🧀 Mac & Cheese 🌶️ Baked beans with jalapeños 🔥 Texas Twinkie 🌭 Sausage 🍖 Beef ribs 🍌 Banana pudding (aka the reason I now believe in dessert soulmates) Let me just say—the brisket alone is worth the trip. So tender, perfectly seasoned, didn’t even need sauce (though their smoky and sweet sauces were both hits) The mac & cheese? Just okay on its own—but it hits different when you pair it with the meat. Creamy meets smoky. A vibe 🔥 the beans with jalapeños was a sweet spicy hit Now, the Texas Twinkie had flavor for days but we went later in the day, and the bacon wasn’t quite crispy. Still tasty—but I’d go earlier next time for that perfect crunch! And the banana pudding?? YOU GUYS! It tasted like somebody’s grandma made it fresh this morning! Homemade, sweet, comforting, and wildly addicting. I could eat a whole tray, no regrets 🔸Pro tip: If you’re the kind of person who loves discovering the underrated food joints—the ones you tell your close friends about—this is that kind of place! 📍Chuck Wagon 719 | South COS 💭 Ever been? I went last weekend. I got there at 10a because I’m 33 weeks pregnant and I was NOT going to miss out on twinkies! Let me tell you the two hour wait before opening was well worth it for me. The BEST BBQ I’ve had since I moved to CO in 2014. I grew up in San Antonio so I know some good TX BBQ. I LOVED everything. The twinkies were so good, even though I ordered 6 (for myself), I regretted not getting more. The Dino rib was so tender it melted in my mouth, my 3 year old was even impressed it was so big he decided it came from a T-Rex. The staff is amazing! Super friendly and welcoming even though I was camped out well before opening. I ordered a lot of BBQ inside and had plenty of leftovers for the week to take home but on my way out I still stopped at their food truck and ordered 3 more Texas twinkie sandwiches to go, my partner was VERY happy having a sandwich for lunch today at work, stating even after being reheated the meat was still tender. My only problem, which is my own fault, was I was so excited when I got to the counter to order that I completely forgot to order peach cobbler and banana pudding. I will be back to try those and get more twinkies! Great experience, great food!
