I’ve now dined at Serva not once, not twice, but four delicious times. Two dine-ins and two to-go’s, which in food critic math is basically a statistically significant sample.

Let’s talk LECHE DE TIGRE, it’s limey, it’s frothy, it’s zesty. When it hits, it hits. That said, I’ve noticed occasional hiccups in fish ratio (and sometimes the sweet potato went MIA like my gym motivation after Thanksgiving), but when it’s right...muah!

Now the YUCCA FRITA. Crispy on the outside, tender on the inside. These are not your average fry. These are the fries you bring home to give to your parents when you need to ask them for something.

And then there’s the CHIMICHURRI sauce, the green goddess of meat sauces. Bold, herby, a little tangy — it’s got more personality than most reality TV contestants.

In short: Go. Eat. Repeat. Whether you dine in or take out, Serva is a flavor fiesta hiding in downtown Hailey. Let’s support places that bring some international punch to our potato-loving valley.

I went as a group of four a few weeks ago on a Sunday. I understand that it's busy on Sunday, but the past Sundays I have been there, they are usually pretty quick. We got there at 1 PM and left at 4 PM. Can someone tell me why it took them an hour to take our drink order? They sat us in the bar area and probably checked on us like five times; three of those were to bring us our drinks and food. We got our drinks an hour after being there, then the waiter came back 30 minutes later to take our food order. An hour and a half later, they came back with our food. I don’t know why this restaurant doesn’t have hundreds of 5 star reviews. I’ve been to Peru and other Peruvian restaurants in the country and this is one of the best. If you’re nervous about trying a different cuisine, the Pollo a la Brasa (rotisserie chicken) is a great choice. If you want ceviche, the Leche de Tigre is amazing! If you have picky kids, they have mini chicken tenders, butter pasta, and cut up hot dogs. Our kids loved all those options. Great staff and service as well....
