This past week, my wife and I had the pleasure of dining at Los Mariachis, Hillsboro's newest Mexican restaurant, which opened its doors on Monday. Right from the moment we walked in, we were struck by the lively and welcoming atmosphere. The décor was fun and colorful, with vibrant tones that set the mood for a casual yet festive dining experience. It felt like the perfect spot to kick back and enjoy some authentic Mexican flavors.
Today, my family and I decided to try the new Mexican restaurant in town. I got the chicken and beef chimichangas, and I can confidently say they did not disappoint. The meats were cooked to perfection—the chicken was tender and flavorful, while the steak was juicy with just the right amount of seasoning. Honestly, I think it was some of the best beef and chicken I've had at a Mexican restaurant in quite some time. The portions were generous, and the crispy chimichanga shell added the perfect crunch to every bite. Pairing this with their fresh salsa and chips, which were on point, made the meal even better. The salsa had just the right balance of freshness and spice, something I always look for when trying a new Mexican spot.
My wife opted for a Hawaiian-inspired chicken dish, which was something a bit different from the usual Mexican fare. She was pleasantly surprised by how well the flavors worked together. She’s usually quite particular about her food, so when she’s impressed, I know it's a winner.
While the food and atmosphere were both highlights of our visit, there were a few small staff hiccups, though nothing too surprising for a restaurant that’s only been open for a few days, but not distracting overall because there were only two waitresses working the floor, and they were hustling non-stop. That said, the staff was very friendly. I'm sure as the restaurant finds its rhythm, this will improve quickly.
Overall, I’d highly recommend Los Mariachis for anyone looking to satisfy a craving for delicious Mexican food. Whether you’re in the mood for classic dishes like chimichangas or want to try something a bit different like the Hawaiian chicken, there’s something for everyone. The food alone is worth the visit, and once the service catches up to the demand, I’m confident this place will become a staple in Hillsboro's dining scene. Read moreThe restaurant itself is very nice. They did an outstanding job of changing it over from La Rosa's. But, this will most likely be a one and done for us. We brought our 20 month old grandson with us because he loves Mexican food and everything was going semi-okay until we ordered. It took roughly 35 minutes for our food and I'm pretty sure it was because they forgot to make our grandson's meal. I say this because our food was barely hot which they cautioned us about the heat if the plate but his food?? So damn hot you could see the steam! And what did they do?? Tossed it on the table directly in front of him and ran off like a bunch of scared dogs!! Luckily ,my husband grabbed the plate before our grandson could get to it but the food was so hot he didn't get to eat his meal..he had some of ours instead. And don't come after me about him only being a baby. When the issue was addressed, our server just shrugged his shoulders and walked away. We then had to ask TWICE for a takeout box for our grandson's food and they circled the expected tip on my receipt. All in all it was not a pleasant experience for the price we paid. Read moreI decided to pick this place for my milestone birthday dinner with my husband Wow the service was crappy!! Our server never checked on us, we had to ask other workers. My husband and I got our dinner 6 minutes apart !!! Wth?? Not to mention we had to ask for my salsa. He was more concerned with flirting and yapping with his coworkers. I loaded a pic of the young girls with extra salsa and they have not finished theirs. I asked for extra enchilada sauce and I would gladly pay. He gave me something else (see the picture)I didn't realizr it and I poured it on my enchiladas. I couldn't even eat my birthday dinner ..my mouth was on fire!! I told him the wrong sauce he brought ruined my 50th birthday dinner and he offered no replacement or an apology. I gave him a tip .
