Thank you for being honest and when I asked about the flour being used …I was not shocked at all. Typical low quality enriched (General mills brand) Not European all natural non GMO 🤨. This place gets packed I’ve seen . To tell you the truth and I’m sad to say this ,really I am … “it sucked” I’m not a fan of this joint. Overhyped and low grade. Seriously 😐 Pizza Hut would have been a better choice. On another note , the music doesn’t reflect the crowd that comes here. (It’s the employees select the music for themselves ) and not the clients dining here . And dessert is Blahh/Mehhh Didn’t even go there….im really disappointed and wondering why people come here? There is a pizza place down the road called ? Pizza that I do not have any affiliation with and they do use European flour on a crispy pizza and NEAPOLITANO and the flour does not bloat me. There are many ingredients that the European Union does not allow that is in the General Mills Brand that you use. A lot of these ingredients do not fit well into my purist diet. The crust was not edible at all. You may want to take note and adjust your mix. - **Fermentation Sensitivity**: Professional bakers note that long cold ferments (e.g., >48 hours) with All Trumps can over-develop gluten, yielding a tough crust. Mixing with 20–30% lower-protein flour mitigates this. - **Water Absorption**: Absorbs 5–10% more water than standard bread flour, improving dough yield but requiring hydration adjustments in recipes. I used your restaurant as a testing ground to confirm my suspicion , I did my research into ingredients in American flour , Conclusion ( the cause of excessive Bloating) . Ingredient Transparency**: The flour contains enrichment additives (niacin, iron, folic acid), which are standard in U.S. flours but may concern whole-food advocates. I have a big concern with bromated flour. You will not find bromate in European flour . - **Safer Alternative**: An **unbromated/unbleached version** (Green Label, Item #D-0509) is available, using malted barley instead. This avoids bromate-related risks while maintaining performance. - **Regulatory Status**: Bromate is banned in the EU, Canada, and Brazil but remains FDA-approved in the U.S. at low levels. Coming to Gypsy Poet was high on my list of Pizza places to try here in Houston, especially after I saw Dave Portnoy's review. Having grown up on the east coast and now living in Houston for quite some time, this was a main event moment for me on a hot and humid Saturday night. When my partner and I arrived, there was already a line outside the door. My excitement was building with every moment, and once I made it to the register, I ordered The Margarita Pizza, which I specifically requested to be extra crispy with some char on the undercarriage. When the pizza finally arrived as you'll see in the video, everything appeared to be visually on point, then I took the first bite. The taste, flavor was good, however one thing that I expected to happen, did not, which was the crust underneath when bitten into being crunchy, and man was I disappointed. I really like the pizza and want y'all to be my number one, so when I come back again, I will state that I want the bottom well done enough to crunch with crispiness, and we'll go from there. Great job overall with customer service, ambiance and overall positive vibes.

The pizza isn’t all that. The staff is friendly. The atmosphere is nice and cool vibe. The restaurant is clean. These things all make it a 4 bc they were outstanding. The pizza alone in my opinion was a 2.5 star. Expensive pies too! There wasn’t enough cheese or sauce on the Cinque Formaggi. It was very dry. I could only eat one slice because it was hard to chew and so dry. My spouse got the Pepperoni Madness and said it was good. The quality of everything was decent but I can’t give it a 5 star since it was so dry. Water station is self serve. Big selection of self serve drinks when you walk in. The building is definitely inconspicuous, no signage on the exterior. So you gotta know what building you’re looking for. Came here based off a friend raving about it but not impressed. I’ll stick to Bollo wood fire pizza for now; there pizza is cheesy and easy to eat thin crust!

Coming to Gypsy Poet was high on my list of Pizza places to try here in Houston, especially after I saw Dave Portnoy's review. Another one of Houston’s overhyped messes, the pizza is decent but overpriced, all drinks are in coolers, sodas are 3 dollars & obviously not re-fillable, (idk if I’m paying 60 bucks for 2 people, I just feel like soda should come from the fountain & be re-fillable, but I digress).

The most confusing thing is the way the cashiers take 5-12 minutes to check out each individual person, we waited in line for 25 minutes just to order. It is all counter service, so I get taking a little longer, but it was ridiculous. The cashier would listen to the order, then go relay that order to another cashier in the back, then come back and finish your order. It didn’t seem very effective. Also, there’s no overhead menu, didn’t see QR code to scan on the window while in line, & there were no menus to browse while waiting in line.

Also, the entire restaurant is covered with plywood walls & surfaces, it’s honestly super ugly and not aesthetic at all. I feel like this is their attempt to be eclectic, but it just looks cheap and unfinished. Why am I paying 60-80 bucks as a couple, but I’m staring at plywood the entire time lol? Also it was hot and very loud in the restaurant. The parking lot is very small as well. A worker came and grabbed my plate to take while I literally was eating off of it, which was so weird.

The only good things was the pizza was good, they had all their dressing & sauces out for convenience, & there’s varied seating. The cashiers were nice, but slow. I feel like this place wants to be cute and quirky but their ordering process is slow & ineffective & the plywood just looks absolutely cheap. I would...

Gypsy Poet Pizzeria is hands down the best pizzeria I’ve ever had the pleasure of visiting!
