
I stopped by Huevos Etc. in Fishers for breakfast and left feeling both satisfied and impressed â and just a little sticky from the memory of their honey-chili drizzle. Let me walk you through the experience.
The ambiance is genuinely amazing. It strikes the perfect balance between energetic and chill. Pop classics played through the speakers â think Michael Jackson, Elton John, Cheryl Lynn, and a few soulful Christian singles thrown in for balance â which really added a comforting, upbeat rhythm to the meal.
The dining space is also well thought out. Itâs spacious, with enough room between tables that youâre not eavesdropping or elbow-to-elbow with your neighbors. That open layout makes the experience feel unhurried and comfortable, even with high foot traffic.
We ordered two dishes, and both brought their own kind of magic.
Huevos Rancheros with Chorizo and Over Easy Eggs (đ¸ pictured): Flavor-wise, this dish was fantastic. The chorizo, eggs, refried beans, salsa, and avocado all played off each other beautifully. Every bite felt intentional â warm, spicy, rich, and satisfying. The only drawback was the tortilla, which unfortunately didnât hold up structurally and fell apart when I tried to pick it up. The potatoes on the side couldâve used a bit more seasoning, but they were well-cooked and hearty. All in all, the dish worked â and worked well.
Avocado Toast (custom build): Let me just say it: ABSOLUTELY KILLER. This was the unexpected star of the table. You can build it to your liking, but the game-changer here is their premium honey infused with chili flakes. The sweet heat combo still lingers in my memory in the best way possible. The toast was sturdy and thick enough to carry all the toppings without turning soggy. It was also surprisingly filling â no food coma, just clean energy. 10/10 would recommend to anyone â especially if youâre looking for something light but flavorful.
Service: This was the one area that came up a little short. Interaction with the staff was minimal, and while we were helped eventually, the service felt subpar at times. It seemed like the staff was spread a little thin â not inattentive out of rudeness, just overwhelmed by the steady flow of customers. Still, our server Johnathon did a solid job managing the situation. He made sure we had everything we needed once we were seated and checked in at appropriate times.
Final Thoughts: Huevos Etc. is definitely a vibe â whether youâre going for a chill brunch with friends or just vibing solo to some old-school hits while knocking back a quality plate. The food is delicious, the space is welcoming, and the kitchen clearly knows how to balance flavors. The tortillas could use a slight upgrade, and the service could benefit from better coverage â but those are minor tradeoffs for the overall experience.

But that's about all the good I can say. We made a reservation for 11am and when we notified the hostess she seemed super confused, like there was no reservation system at all for her to check. But it wasn't too much of a big deal, they still got us seated pretty quickly. Food took a while to come out and it didn't come out all together - I waited an extra 10 minutes for my plate which was the Salmon Benedict. I absolutely will not be eating here again after tasting it. It's supposed to be a smoked salmon but mine was definitely not smoked, and tasted like just raw fish they had unthawed and thrown on an english muffin. My boyfriend tried one bite and said it tasted rotten. So I requested a replacement side of pancakes instead because everyone else was eating, and knowing it took awhile for the first round of food I didn't want them to wait on my food forever. Our waitress left the plate of inedible food in front of me, almost the entire time that I was waiting on the pancakes, until my boyfriend asked if she could take it away because it was grossing us out. When my pancakes came out they were super dense, undercooked, and still gooey from the batter not being completely done. I ended up literally not eating anything other than a few bites of my parties food. Not to mention that 3 of our 4 plates had cracks and chips in them, which from a food safety standpoint is incredibly unsafe to serve on. We brought this to the attention of the host who said we will get seated don't worry about it. Then tried to say they were doing it by the list and showed us the list but obviously they were not as we showed them our name and how names past ours had been marked as out as they were already seated. We finally got seated. The server lacked personality. One of the people with me had cold food and was just fed up and asked the food to be taken back and taken off the bill. They didn't want anymore food from their kitchen. I wish I had made the same choice. The food was not good at all. Let's just say I was thankful for the pepper and salt at the table. I also notice some sneaky pricing practices as well. Offering other meats as an option but they are really just extra add-ons. Nothing on the paper menu talking about it at all. Which might be something they want to add so people know what they are getting charge before hand. I had heard all the hype but was very much disappointed. The server did nothing to recover at all.
