Mi Pueblo Express — Restaurant in Lacey

This was way better than any taco truck that I've had and I'm pretty chubby. I love taco trucks. This food trailer looked new and clean and the dudes were super nice and attentive. I always have to pay for extra salsa/red sauces, but they gave me all that I wanted for free. There was something about the chicken quesadilla that made it the best I've ever had in any mexican restaurant and the guac was bomb! Growing up with Grandma's authentic central Mexican cooking, I have to say this place is decent. It get the craving of street tacos met. Not the best tacos I've had, but better than what I've had so far in Washington State. Meat has some flavor and is crispy. Not greasy. Condiments are fresh (onion, lime, cilantro). Thank goodness we found some legit tacos in the Olympia area!! After relocating here from cities with amazing Mexican options, we’ve been on the hunt. The birria tacos from Mi Pueblo were really solid. Good portions, good sauces, excellent consommé, and really friendly folks.
