This used to be one of the better spots in Liberty Lake for Mexican food — especially their mole sauce, which I had recommended to people before. Last night’s visit was a complete train wreck and left me wondering if the owners just stopped caring altogether.
First off, the service was sloppy from the start. One person in our group ordered jalapeños — they never arrived. Another ordered a Caesar salad, which came without a drop of dressing. Not on the side, not forgotten in the kitchen — just handed to the table completely dry. That’s not just careless, it’s insulting.
Then came the food. Everything was off. The flavors were bland, the textures wrong, like nothing was prepared with the same recipes or care as in the past. The mole sauce, which used to be a standout, was flat, bitter, and almost unrecognizable compared to what I’ve had before. It was honestly shocking how bad it was.
The low point, though, was the salsa. Salsa should be a no-brainer for a Mexican restaurant. Instead, what we were served smelled foul the second it hit the table — sour and spoiled. Against my better judgment, I ate some of it, and now I’m sitting here sick. I’m fairly certain that salsa is what did it. Food safety should be the bare minimum, and they couldn’t even clear that bar.
From forgotten basics to terrible flavors to food that may have actually made me ill, this was easily one of the worst restaurant experiences I’ve had in years. And the most disappointing part is knowing that it used to be good here. Lindo’s went from being a solid local choice to being a place I wouldn’t recommend to anyone.
Do yourself a favor: skip it. Liberty Lake has other options, and this place is no longer...

The place is small, with a strip mall entrance and feel inside but they seem to be trying to make it as nice as possible. We arrived just before noon on a Sunday and the restaurant was nearly full. Of course it was consequently very loud and there were lots of children present running around so not the best atmosphere but not really the fault of the restaurant either. By the time we were seated there was a line of people waiting to get in. The service was pleasant but lacking attention to detail and slow to respond to requests. Did not receive a refill on chips or salsa and our meals took considerably long to arrive after ordering. While we understand this is a normal consequence of a busy restaurant, it would have been nice to experience the restaurant the way many seem to have by receiving good individual attention and meals delivered quickly and efficiently. We had read that the portions were large here, but we actually found our plates to only be three-quarters full whereas in most Mexican restaurants an entire large plate is covered...not sure about that. Read moreMy mom lives just down the street from Mexico Lindo and eats there quite often. We do an every-other-week dinner night with her and last last week we were in the mood for Mexican. We usually go to the other Mexican restaurant in town but my mom suggested Lindo.
I was surprised at the interior as I'd been to that physical location before when it was a Hawaiian restaurant (was gross and never went back - not surprised it went under so quick) and it looks totally different! They did some heavy remodeling and it looks great! I immediately thought that the atmosphere was better than the other Mexican place.
We got a table immediately and the waitress, Roxy, greeted my mother enthusiastically as she had apparently served her many times before. After some quick introductions we ordered.
Right off the bat - some of the best chips and salsa I've had. Their quac was amazing as well!
I had the huevos rancheros, my wife had the Arroz con Pollo and my mom had some tacos. We all sampled each other's food and everything was amazing!
