Ooooh! I’m thrilled I stumbled upon this place. They have all my favorite ingredients, and fresh tasting as well. I shared with the staff (Lee) how Uni usually is a dessert for me, as it reminds me of the ocean, which means a lot since we're landlocked and seeing the ocean doesn’t happen often. The uni they have is truly delicious and did its job in making me feel nostalgic. The fish-rice ratio is very thoughtful. The rice served as a good platform, elevating the flavor of the fish I got. Their wasabi is legit, and their pickled ginger was delicious and not overwhelming.

Four orders of sushi would have definitely been sufficient, but since it’s my first time at Ninja Sushi, I felt the urge to try their Amaebi (Sweet Shrimp), and I’m glad I did. Next time, I’ll have to choose between red snapper, striped bass, and mackerel, but just for today, I'm okay feeling a bit fuller than I would have wanted.

By the way, I was told that beginning 1/1/24 (yesterday at the time I posted this), they handed over the restaurant to two new owners, both of whom are sushi chefs behind the bar. I am all for supporting small businesses, and I wish them all the best. I hope the quality of their food and thoughtfully sourcing their ingredients consistently...

Beautiful food, outstanding flavor, and great staff. I ordered the Philadelphia, California, and Ninja Rolls. I'm not at all disappointed. I'll be driving up from the Springs more regularly for this. Some of the best in Colorado.

Update 12/3/23:

Just tried the Japanese fried rice w/ chicken. I'm in heaven! Also just tried the bluefin tuna and Yellow Jalapeño sushi. To die for!

Update 01/18/24:

Under new ownership. The original owner, Sunny, sold the business to his friend J. Our favorite sushi master is now in charge of service and doing an excellent job. The food is just as delicious as before. A few minor changes to the menu and presentation, yet still as beautiful and satisfying as before. Tried the new Tuna Carpaccio. Blown away! I got a little ahead of myself a indulged in a few pieces before taking the picture 😀. The Yellowfin Jalapeño is as delightful as ever with a new unique presentation. I appreciate being able to use the mini boats to sip the marinade after each bite... and don't get me started on the Crab Rangoons and Wagyu Fried Rice....

I checked my phone-I spent eight minutes placing an order for sushi deluxe and maki combo. It took so long because I was asking for nothing but salmon, tuna, shrimp and eel in the sushi deluxe, with a California roll. I was told I would be charged extra and agreed. I also asked for me so soup with extra green onions, and edamame with extra salt. I didn’t get shit that I asked for. Edamame has no salt whatsoever, miso has no green onions at all, no California roll. I got a tune roll that looks like it’s from tuna that was ready to go on three different days. I haven’t eaten anything, so I don’t know if the food is poisoning incarnate , but the service absolutely sucked and I’ll never drop money there again. i’m not even willing to walk in and try to get my money back.
