Gator Tails Cajun + Creole Food Truck — Restaurant in Longmont

Ok, this one is all my preference. The wife doesn't really go for shellfish or Cajun/Creole. I get so excited when I hear these guys are serving food. I've had them twice now and it's definitely top five favorite kind of food I've ever had. I had the crayfish and chicken each time and can't quite describe how good it tastes. This time I got there late and they were almost out of my favorite dish. The photo does not do justice for how yummy and fulfilling the dish is. You have to try it. I heard about this truck and had to check it out at the Highland Street Fair. JFC! It was worth the hundred degree temperature of that day. I ordered a combo of the gumbo and cheesy crawfish etouffee. This is one of the best cajun creole I've had in Denver so far. That roux was cooked with love & passion. Amazing depth of flavor and perfect blend and layering of spices. The crawfish was bite-tender, not overly chewy. Even though I don't drink, I keep track of my local breweries food truck schedule to know when Gator Tails is coming, because I will grab a meal from them Every Time.
