I really hope the team will take this feedback to heart â I genuinely want this restaurant to succeed. Itâs so exciting to finally have an Asian restaurant close to home in the Germantown/Schnitzelburg area, and Iâd love to become a regular here.
Here are a few areas where I think thereâs room for improvement: Tempura: The batter was too thickâI found myself removing a lot of it. Traditional tempura tends to be light and crisp, allowing the vegetable underneath to shine through. Not expecting authentic here, but even a slightly lighter coating would make a big difference in texture and presentation. Iâve included photo of how much breading I removed. Sushi rice: The rice was quite moist and could benefit from being a little drier and more seasoned with rice vinegar (or experiment with mirin, sake, something to help the rice). The balance of texture and flavor in the rice really makes a difference in sushi rolls. Tobiko: The tobiko had a chewy/rubbery texture, which may suggest itâs not as fresh. I understand it might not be a big seller, but perhaps featuring it in a roll or running a tobiko special could help with turnover and freshness. Salmon roe: These were saltier than usual â maybe due to dehydration or the particular variety used? Not sure, but definitely unusual, never had this experience with salmon roe.

   Read moreEnjoyed a really nice dinner in our neighborhood at this sushi (and more) restaurant. Building has a step up so a bit inaccessible for those needing wheels for mobility. One set of stairs has a 45â degree ramp and the other has nothing.
Itâs only on street parking with chunks of the nearest parking marked out of bounds with no parking signs. Still easier to park than in the Highlands!
The building was renovated some years back to house a chiropractor and since then no business has stuck around long⌠burgers, tamales, bagels, etc. Hoping Jaymar breaks that trend!
Service was friendly but very unhurried or attentive. Food was average/on par for what youâd expect from a Japanese/sushi focused restaurant catering to American mid western tastes.
Enjoyed a really nice miso soup. Tempura was ok, just a bit heavy on the breading. Salmon roe, tuna rolls, and eel were what youâd expect and want:) Vegetable fried rice was perfect. Nice garnished that werenât overdone. Beloved enjoyed an average saki.
Not much attention paid to atmosphere sadly. Bad canned music. It is nice to have the sushi bar being open to the diningroom.
Overall? About what youâd expect for Germantown sushi. Was good, safe, clean. A bit of attention to create a sushi-relevant vibe would go a long way. Hot tea would be nice. Prices decent for 2025....

From the moment I sat down, the quality and care in every dish was clear. The tempura was incredibly fresh with a light, crisp texture â and the dipping sauce? Absolutely outstanding.
I ordered the fried rice with shrimp, and not only was it bursting with flavor, but the portion was generous enough to satisfy even the hungriest diner. The wonton soup truly stole the show â rich, aromatic, and easily one of the best Iâve ever had.
To finish, I indulged in the mango sticky rice, and it was nothing short of phenomenal. The perfect balance of sweetness and texture â a dish everyone should experience at least once.
