Wow, what a terrible experience from such a highly rated restaurant. Friday evening and sat at a table in the bar, which was much better atmosphere than what was expected. Chips and salsa was very good. Liked the Smokey dark salsa but the avocado lime salsa was very good also. Drinks and appetizer ordered but slow to come out of the kitchen. Appetizer was average for sear tuna sashimi. Nothing really anything special.
Ordered a bone-in ribeye to split with my spouse. The menu says it is an exquisitely marbled ribeye and based on the price I would expect it to be a prime steak. So 40 minutes after ordering the steak it finally comes out and is the wrong steak, not a bone-in ribeye. So back to the kitchen it goes and a young lady comes out and assures us a fresh steak like we ordered was going on the grill and would be out shortly. 20 minutes later the correct cut of steak comes out and presented to us to cut into it to verify it is cooked correctly. Unfortunately this steak is slightly cooked on the outside and raw on the inside. This was not their touted and highly preferred medium rare cook for a steak. It was also noted that the baked potato was equally cooked, crispy outside and uncooked inside. So back to the kitchen for that plate. We also noted that the steak was tough to cut through and not expected from what this level of steak was suppose to be. So another 15 minutes and the steak reappears cooked slightly more but still raw in the center, not even rare. The person bringing out the steak was the manager, a young man named Joseph we were told. As we expressed our dissatisfaction with the way the steak was cooked, the lengthy time it took for the order and the initial wrong steak, Joseph informs us that they were dealing with a busy night and a large party in the back of the restaurant that they pushed everyone else’s order behind that order so they could get the large party’s food out properly which caused our order to take so long to make but no explanation why our order kept coming out wrong. His apology sounded like my order was less important than the large party’s in the back, which is what I told him. He remarked he was sorry we had a bad experience and then turned around and left. Nothing about his explanation apology made things better. He has zero skills at handling this type of situation in the restaurant which is why he fled our table for the back area of the restaurant.
The restaurant was gracious enough not to charge us for the wrong steak or the bad steak that we did not eat and sent back that they could not cook medium rare. They did charge us fully for the drinks and appetizers and the waitress apologized for not staying on top of our order better and for the poor management staff.

My wife and I took our son there (he's a college student at LCU) for a nice dinner before we went back home to Colorado and I can't begin to tell you how disappointing this was. I'm going to be detailed in this post because I want readers to understand this is not just us being picky or being hard to please.
My son and I ordered the 10oz filet and my wife ordered the salmon with mixed vegetables. It started when we had been waiting for almost 40 mins for our food while listening to the kitchen staff cheering while they were watching the Texas Tech football game. Our food finally came out nearly an hour after we ordered. The manager actually brought our food to the table (but didn't introduce himself, but we found out later he goes by Joseph or Alex) explaining that their filets are cut too thick and it takes a long time for them to get cooked. Our steaks were literally like shoe leather and did not look appetizing at all. I wish I had taken a picture. There was no flavor and they were chewey beyond belief. My wife's steamed vegetables were not even cooked. I tried cutting her broccoli with a fork and couldn't. They were hard like fresh veggies that never saw any steam. I asked our server (Isabella) to take my food back that I wasn't going to eat it because it was too tough. She said she wanted to get her manager to come over. The manager finally came over after about 10 mins (it was very clear we were NOT a priority) and asked what the issue was. I told him both steaks were like shoe leather and the flavor was just not even remotely appetizing and he asked if he could make me another steak. We had already been sitting there for an hour at this point and had no desire to wait longer so I told him no. I also told him about my wife's veggies and he said that's what took him so long, he was back in the kitchen trying the vegetables, which makes no sense. In the end we ended up having to pay for my wife's meal minus $5 for the uncooked veggies, and my meal was taken off. The total for our meals which included two absolutely terrible steaks, and undercooked vegetables was just over $60. We feel like that should have been a totally comp'd meal. It was awful. The only redeeming quality was our server Isabella who was great despite the manager and the lack of empathy for how awful the meal was.

Read moreI gave service a three star because we had to stand for 10 minutes waiting to be seated. No they were not busy in fact we were the only ones there. We could hear the staff cutting up with each other. We finally had to hunt someone down to be seated. Our waiter Joseph/Alex was the reason I did not give service a 1 star. He was patient and kind as how I have to order food can be complicated and he did a good job with us.
First, beware that your grilled items will be grilled with canola oil a very highly inflammatory oil. Thankfully they were willing to do our steaks and eggs in butter although we know we still got some trace of canola oil just because of other orders.
Corralito is just like any other steakhouse with their choice of sides. All unhealthy options for regular sides and any healthier options costing an arm and a leg. Thankfully they offer eggs but for 3.00 each? That's pretty pricey. I hope Corralitos will lead the charge by making a carnivore meal more available and not cost out the wazzoo to be able to eat healthy. Eating just meat and eggs I have reversed diabetes, fatty liver, kidney disease, no longer on High blood pressure medicine and lost 100lbs. Corralito be the steakhouse to stand out above the rest and I will be glad to return.
I ordered a new York strip with 2 eggs. Joseph/Alex realized that all the regular side options I could not have for health reasons and acknowledged having to pay 3.00 per egg was a bit much so he offered a discount. I GREATLY appreciate that. If your his boss and reading this - he did a great thing doing that, give him a raise.
Their house seasoning for their steaks have sugar in it so be aware of that. They were able to do my steak with just pepper and salt. PS: Corralitos please change from table salt to real sea salt. Table salt also has dextrose in it.
