If you haven’t been to Roman Gourmet in Maplewood, stop what you’re doing and get there today. This place isn’t just serving pizza — they’re serving memories, the kind you still think about days later.

From the moment you walk in, you can tell this is a place that takes pride in what they do. The aroma hits you first — that perfect blend of fresh dough, melted mozzarella, and real-deal sauce that’s clearly made with care. You know how most places claim to have “the best slice”? Roman Gourmet actually delivers.

The pizza is outstanding — full stop. I’m talking perfectly crisp crust with just the right chew, sauce that’s flavorful and balanced (not too sweet, not too acidic), and cheese that stretches like it’s in a pizza commercial. You taste it and you know — this is someone’s craft, not just a product.

And speaking of that — the owner is exactly the kind of person who makes you want to come back again and again. Friendly, engaged, present. You can tell he cares — about the food, the neighborhood, the experience. There’s a passion behind this place that you can actually feel.

Maplewood has a lot of great spots, but Roman Gourmet is in its own lane. It’s the kind of place where you walk in once and suddenly it becomes your spot — the one you recommend whenever someone asks where to get the best pizza around.

Bottom line: If you love pizza — real pizza — Roman Gourmet is a must. Not good. Not great. Memorable. Special. Standout.

Roman Gourmet is located in the corner of a busy shopping center in Hillsborough, NJ. There is decent parking, though crossing the lot can be a challenge sometimes with the amount of people and traffic in this strip mall. Once inside, one finds an ample amount of seating, as well as a pleasant atmosphere with cozy lighting. Another plus is the vast drink options this place offers, including Boylan Sodas, one of my favorites for birch beer.

This establishment has gone through several changes in the past few years to become what it is today. The first time I ate pizza from this restaurant was when I was a child and it was called "Franks Pizza." This eventually moved on to "G&M Pizza," and then "Nelson's Corner Pizza," before finally becoming the "Roman Gourmet" it is today. Initially, I was upset with the change as I had enjoyed the pizza prior to the change because it was rich with garlic flavor and Roman Gourmet is not. After revisiting, however, I realize that the quality here is really good. The crust has not changed much over the years and remains fluffy and delicious. The cheese is fresh and has a long stretch factor. The sauce is also quite rich and flavorful. The chicken, bacon, ranch slice was much more enjoyable than the college town slices I'm used to. The chicken was cooked well and full of flavor and the bacon was crispy. There wasn't an overuse of the ranch sauce either, which is one of the key flaws with these specialty slices. Been coming here for almost a year and got to share our thoughts on the food. We live in Basking Ridge and we travel here for their food because it's just that good. The pizza slices are huge (compared to other places) and they're very tasty and chocked full of whatever you ordered on them. We usually go late weekends for a late dinner or to buy for the next day.

Besides the food if you're lucky to have Malcom at the counter you're in for a great experience! He was there on our first visit and he was great! He explained the different slices available and even made recommendations of what to try first or what... Most places will tell you all is good and push whatever they have left but not Malcom - great customer service! Because of the pizzas and quite frankly Malcom's personality of welcoming and appreciating us as customers we usually go at least once a month if not more.

We've now tried at least 2/3rd of the pizzas and most of them have become favs so we have to resort to alternating our choices. The times that we go and there's no Malcom we're left with the quintessential pizza slingers or worst! For us, Malcom makes the...

Had the pleasure of stopping in at the place for lunch.They had a lot of interesting and delicious looking pies. I tried a stuffed philly cheeseteak slice which I have never seen anywhere before and also had a chicken ceaser salad slice and both were awesome. The staff were really friendly and the owner Vinnie is great. He told me how his dad started it in the 70s. Over 50 years there and I can see why. The place got really busy just as I was leaving. Kids had a half day I heard, so tons came in along with some families, but the staff moved really quickly and so did the line. The extra outdoor seating helped. They were ready as I saw them prepping a lot of pies while I ate. Wish I tried the wings, those looked really good too. Highly recommend and the town is really coolas well. Very "Main Street" and nicely decorated for holidays.

Mine was chock full of pepperoni and sausage -- sounds like a 'so what', but somehow it tastes much better. I would highly recommend that and their traditional pizzas. FWIW I find this place is much better than many of the local options I had in Brooklyn previously. Worth a visit for sure.

Had to take out pizza a few times and dined in for lunch today and ordered the "volcano". It's basically a stromboli turned on its side and narrowing at the top. Mine was chock full of pepperoni and sausage -- sounds like a 'so what', but somehow it tastes much better. I would highly recommend that and their traditional pizzas. FWIW I find this place is much better than many of the local options I had in Brooklyn previously. Worth a visit for sure.
