I got to try Tiger Ramen and it is the closest to ramen in Japan that I have had in the DFW area. This is the only ramen place around here that I want to go back to willingly. The broth here is great and different from pretty much all the other places around. The ones I tasted were chicken base and very flavorful. The one thing almost all the other places are doing wrong are over cooking the noodles. The noodles were here were もちもち (Al dente). That in my opinion, combined with the broth is what made it the most authentic to Japan. Also got to try the hand rolls. These were unique and tasty! I got to try the Spicy Maguro and Salmon. The Spicy Maguro was topped with slices of jalapeno and a dab of wasabi. The salmon were topped with capers and bits of lemon, a great combo. The kids meal came with the karaage chicken, french fries, shrimp tempura and onigiri. I can't wait to go back and try more of the menu. The broth isn't the rich, creamy, porky broth you might be expecting with tonkotsu ramen, however that doesn't mean this broth isn't flavorful and creamy. The spicy paitan broth is really well balanced. The spice level isn't so spicy that you can't appreciate the soup base, and it's spicy enough that it adds an extra layer of seasoning to the broth.
The noodles are on the firmer side which is what I prefer, and they are generous with the chashu. Most places only give 3 small slices, but mine had 4 decent slices. The chashu is seasoned well, and it's cooked just right. The egg was slightly overcooked for my preference, but that's not a big deal since I'm mostly there for the broth, chashu and noodles.
