Lechona Truck is hands-down one of the best spots in Miami for authentic Colombian cuisine.

The highlight here is definitely the lechona, which is cooked low and slow for 18 hours. The result is incredibly tender pork layered with seasoned rice, peas, and that perfectly crispy skin.
