Knead Wine — Restaurant in Middleburg

This place is ABSOLUTELY AMAZING! Their pizza excellent. The crust and sauce are great, but their toppings are to die for. The bacon slices on the pizza were big fat farm fresh bacon as well as every other ingredient. Each little detail is well looked after. They gave a little packet of fresh red pepper flakes to go with the pizza. When I say fresh, I mean fresh. They were notably more potent than the red pepper I keep at home or you normally get at a pizza place. But the best part really was the people. Since they are a takeout operation, they gave us awesome suggestions on where to enjoy our pizza in town. They also spent at least 20 minutes with us while we looked through their wine selection. They gave us suggestions based on what we said we liked, which was amazing and their prices are very affordable. They are all either well versed in the wines that are out for selection or master sommeliers themselves. So the advice is coming from people that know what they're talking about! We've had about half of the wine bottles that we took home that day, and all of them have been wonderful. I couldn't recommend Knead...

The pizza is not worth the cost, in my opinion. Often thought the pizzas were lacking in cheese and flavor. The sauce isn't very flavorful, and they don't do anything on the crust. A simple compound butter applied to the crust would make a big difference. I have had pizza from here 5 or 6 times. I was pretty disappointed each time. They do have a nice wine selection and nice staff, but I feel the pizza is lacking. I was surprised by my most recent order that had bacon. They use such a thick cut of bacon, which you would figure would be a good thing, but it's so thick that it's chewy and pretty much just a chunk of ham with fat at that point. I notice too that the crust is often under done. That could be because they don't want to burn it or something, but I think the right amount of stiffness in the crust makes a difference in flavor and eating experience. I may be judging harsher than some because my family had a pizza restaurant years ago in a different state, but if I'm going to pay $20+ for a small pizza, it should...

Local or not you need to try Knead Wine for their pizza and wine. They offer traditional or gluten-free dough; both of which are phenomenal. All of the fixings are exceptionally vetted for quality. I can't say enough great things. If you're gluten free for whatever reason, you're going to love this pizza. Trust me, because 3 separate taste testers at the house swear by it after trying different gluten free options all over the world. While your pizza is cooking check out their eclectic wine selection. Ask for a recommendation, pick up something random, either way you're going to love it as they have put so much time and energy into picking only the best for their modest selection.
