I’ve been coming to Ajua’s for a few years now, and if there’s one word to describe it—reliable. This place consistently delivers delicious food, whether you’re dropping by with friends or out for a casual dinner. It’s the kind of spot where the chips and salsa mysteriously refill themselves because you and your table are inhaling them like it's your last meal. Hands down, some of the best chips and salsa in Midland—crispy, flavorful, and always fresh.

If it’s your first time here, go for the sizzling fajitas—they’re a house favorite for a reason. I also always swap out the refried beans for their charro beans. Trust me: they’re bold, hearty, and packed with flavor. It’s a small change that makes a big difference.

The mango chamoy margarita is another must-try—sweet, spicy, and a little dangerous in the best way. Their mixed drinks in general are solid across the board.

The only thing keeping this from five stars? Service can be hit or miss, especially when they’re slammed. The bar gets overwhelmed easily, and sometimes the staff is clearly stretched thin. To their credit, I’ve seen improvements over time, but if you’re showing up during peak hours, bring a little patience.

I took my gal pal here for her birthday at her request. We were able to grab a table in the bar area right away. The chips and salsa were good...pretty hot for this weenie white girl, lol, but so flavorful I just couldn't stop eating it! She said it's her absolute favorite salsa and pours it on everything! She got her usual beer, and I tried the strawberry mojito....it was good, but probably not $11 good. It's was a little difficult to get our server's attention at times and have her bring our requests, but she seemed kinda busy, having to handle all the tables in the bar area herself. When our food came, it was quite delicious! They had a perfect combo plate for me...2 enchiladas and two tacos. You could tell the tacos were homemade, as they were at an angle, they were so stuffed! The taco meat has a good flavor and the shells were thin and crispy. I even liked the beans! Cheese enchiladas covered in queso were a good choice too. I like the food at this restaurant and have been a customer at this location and the Odessa location for many years. I usually tip 30-50% depending on service. I have tolerated the substandard service in the past and the smoke that migrates from the bar area and the backroom just to get a quick bite of good food...HOWEVER, when I went in this Sunday morning I was seated and remained seated for 15 minutes and was never acknowledged again, although at least three servers passed my table no less than two times and the hostess that seated me made eye contact with me once while she was on a phone call. There were two other tables of patrons that were getting service in the whole establishment. I finally approached the hostess/cashier and two female waitpersons visiting at the front.
