Wow. I ordered the extra topping on veggie according to the unclear menu and she said it was for a fee not one additional topping included. When I inquired about adding the fresh garlic she hung up on me. I called back giving the benefit of the doubt it got disconnected but she didnât pickup after. I wondered if she recognized my number. đDrove here 25min RT to pick up my order and ofc based on her horrible customer service and probably hanging up on me, she didnât put in my order. And surprise surprise a sign on the door theyâre sold out when 12 min earlier she was taking my order and only mentioned closing time, not being low on dough. âDoesnât matter how good food could potentially taste when disrespected just trying to treat yourself for dinner, treated less than bc Iâm âthe first one to notice that on the menuâ, and when I knocked on the window to talk to management about this experience since staff were still inside the husband/owner says âwell you didnât order because youâre order wasnât put inâ đ¤Śđťââď¸ He also said theyâre on a CELLPHONE which means she had my # and could have called back if the call was dropped but avoided taking my calls when calling back. So unprofessionalâźď¸Nothing matters when youâre unkind, brash, and unloving like she was. Management is her husband so letting him know that wasnât ok didnât go far when ofc he has to have his wifeâs back if he wants peace at home. This is outstanding pizza and would get deserved attention no matter where in the country they located, NYC included.
Expect balanced, refined flavor and excellent texture. These pizzas are made from a relatively high-moisture dough cooked at high temp in a wood-burning oven with a stone surface. The crust is medium-thin, with a bit more air & glutenous chew than a drier, classic NYC style crust, yet unlike a true Neapolitan, the bottom has perfect, crispy leopard-skin surface char that doesn't flop, with a thin core of fresh-proofed fluff above, and creamy, flavorful mozzarella with a perfectly balanced bite that doesn't string excessively but is never plasticky or tough. The sauce is appealingly right down the middle in flavor and screams "quality." Salt levels of each component are super dialed-in and complementary to each other.
I recommend first getting what I call an NYC Margherita (a plain cheese pie with basil); for that, here, you'll ask for a Margherita with Extra Cheese-- which means you'll get about 90% cheese coverage, with fresh basil, a little EVOO drizzle, and just the right sprinkle of Parmigiano. IMO, that's how you benchmark a pizza joint. That said, I've also had their Truffle (a white pie), which has flavorful, assorted fresh mushrooms, high-quality black truffle oil you'll immediately notice, and amazing local Italian sausage that rivals any I've ever had. If it sounds like your thing, it's an absolute must-try! The whole menu looks killer, as do the specials I've seen pics of.
I'd suggest following them on social media if you want to keep track of specials and any variances in hours due to being a small family operation.

I've also been to Italy 3 times... đ This place is amazing. I've been wanting to try them for a while but just got around to it today. I walked in to order a margarita pie to go, and I was immediately greeted by the owners. We struck up conversation about where I'm from and how they started (which is a cool story). I decided to have a slice right then and there after I saw the REAL wood burning in the oven. If you know, you know you have to eat on site to get the full effect of a genuine woodfired pizza. And I'm so glad I did. The owner makes it right in front of you, you can see the ingredients and the quality. The sauce and dough are made in-house, and you can absolutely taste that fact. They use buffalo mozzarella, which is key to a perfect pizza. I recommend dining in to get that crispy crust the oven offers. If you take home, it will still taste amazing! I had another slice when I got home and it was still great and the crust was still crisp, just not the bottom because that's what pizza does. I also heated up another slice in the oven later on and it was incredible. Hands down, the BEST pizza in midland! Yes, you can get a domino's pizza for like 6 bucks, but their pizza is hands over fist better than any cheap chain pizza. Highly recommend supporting this business and eating all the pizza!...
