Don Tomas Cafe in Midland, Texas, is the kind of place that invites you in with the promise of a rich, authentic embrace of Mexican culinary traditions, and then delivers on that promise with heartwarming sincerity. Walking in, the aroma of simmering spices and roasting peppers envelopes you, immediately transporting you beyond the borders of West Texas and straight into the vibrant kitchens of Mexico.
Their specialty, the Chile Verde plate, is a masterpiece of comfort and depth. Tender pork, slow-cooked to perfection, is bathed in a lush, tangy tomatillo sauce that strikes the perfect balance between heat and flavor. It's not just a dish; it’s a narrative of tradition, patience, and the slow unfurling of layered tastes that speak of home and heritage. Each bite is a reminder of why some recipes are worth preserving through generations.
Then, there are the Chile Verde burritos. These substantial beauties are wrapped in soft, fresh tortillas that provide the ideal counterpoint to the rich filling. The generous portion of Chile Verde inside is bold and unapologetic, the flavors robust and unapologetically authentic. It's clear the folks at Don Tomas Cafe take pride in their food, and it's reflected in every mouthful.
The atmosphere of Don Tomas is unpretentious and welcoming, a true gathering place where conversations flow as freely as the Horchata. It’s not just about the food, but the experience of communal dining, of being part of a tradition that goes beyond what’s on your plate.
Midland might be known for its oil fields, but places like Don Tomas Cafe are the real gems. They capture the essence of hospitality and culinary artistry that makes even a simple meal feel like a grand feast. If you find yourself in this corner of Texas, do yourself a favor and let Don Tomas Cafe remind you of the power of good food, made with love, in bringing...

I've gone several times after this, and pleased to say there hasn't been another issue like the first post. Very happy.
UPDATE! It's been a year since I had the experience underneath. I was back in town, and decided to give this restaurant another try. I am extremely happy to say this time around, they did a fantastic job. Ordered the same thing that I always do. Egg, bacon, extra bacon and beans. Nothing else. The order was made exactly how I like it, and what I was more impressed with was the thickness of the burrito, and the taste of the food, especially the bacon. Some restaurants cut very fine pieces of bacon and pass it off as a full strip, but this burrito had well cooked chunks of bacon. I've updated a photo as well. The price is very fair for what you get. Obviously it's a very busy location, especially on Saturday, but even with that, my wait wasn't too long. I like to commend the restaurant for reaching out to me before to make things right the first time. I didn't tell them I was coming back; I wanted to see how the experience would be the second time around. And it was a great one. Thank you, I will definitely be back.
Good food, and I know it was a Saturday so busy, but they should try to look a little more carefully at the order. Paid for extra bacon, but seemed just got the same amount from the pre-made egg and bacon tin. There was a good amount on it so maybe in wrong. Also, I didn't want cheese, and that's what they put on there. The food is delicious, the people are very friendly, so just maybe one of those things where everybody is busy, but nevertheless, I would have preferred to have the order done correctly and had extra bacon actually added on to it. Next time I'm in town, I'll still go by, but I'll double check my order...
Read moreThe food here is AMAZING!🏆 However my 3 star rating is based on waiting time and the fact that they never answer the phone. I've try to call almost every Saturday to place a pickup order so I don't have to wait in the super long line but the number always sounds disconnected!. I'm not sure if there's a secret number to call because I see the lady taking orders over the phone but every time I call there's no answer. So I have to go in and wait up to 40 minutes just for 2 burritos 😭. It's a very small place and if you really want to catch an empty table you have to go in very early in the morning. I like the fact that they don't have waitresses and instead they hired 15 ladies to run the food line but even still, the food doesn't move as fast to meet demand. I understand this is not a fast food restaurant and that good things take time but 25-40 minutes for just 2 burritos is not acceptable...
