LOVED this place. In addition to dining in, I ordered food to go a few days later. I will go here again, if ever in Minnesota.
Update: it's fair to say I'm obsessed with Chimborazo, the food will bring you back over and over. I've since been to Minneapolis- twice (September and February) and both times Chimborazo was a must. I've had almost every menu item now and whilst there are clear favourites, I've yet to be disappointed in the meal. The only caveat being-the staff is a hit or miss. My end of February trip I wanted to travel to a place sort of close to Chicago that would be relaxing for a few days and with great food. I kept thinking of Chimborazo, so despite the 6+ hr drive, bitter cold and load of snow, it was chosen so I could indulge in their awesome Ecuadorian cuisine. Upon nearing my destination, I called to place an order for pick up, super nice person answered and she was very friendly and kind as I arrived and waited for the food to finish being prepared. A few days later, on my way back to Chicago, I ordered a ton more food to take home. A big contrast-the person to take the order was rushing me through, and became a bit annoyed upon me asking a food related question. When arriving to the restaurant to retrieve the food prior to getting on the road, this same person was there to āgreetā me. While it's a bit hard to find parking in the late afternoon, the food is more than worth it. The wait staff (thank you so much James!) seated us immediately despite it being packed, had a ice cold glass of water in my hand before I'd read the menu, and happily explained the many amazing offerings on the menu.i haven't had swift and happy service like that in a long time!
I had the daily special, a mega-savory combo of shrimp, steak, and chicken, AND chorizo (seriously like a pound of meat total), skewered and marinated in a BOMB "highland spice" mix that I would love to get my hands on, with savory Andean fried rice, a tart quick pickled mix of veggies reminiscent of ceviche, amazing pintos made with BEER (so good you have to try it to understand) and a thick cilantro sauce that I put on absolutely everything... And I forgot the name! I ate everything though! Ask about their specials whenever you go!
My partner has the Chupe de Pescado, halibut in a tasty wine and tomato sauce with some very savory spices served with white rice and these AMAZING fried plantain chips, again with that ubiquitous cilantro sauce. I only got one bite, and they stole my shrimp! It was amazing though, I've gotta try making that sauce with clams or something.

Chimborazo was no bore at all. The interior is humble with cultural adornments galore. It was quiet for the first hour, after which this place got poppinā; we didnāt see a single table free during our departure
The Churrasco was my choice. Iāll admit, the plate looks a bit confusing⦠but it bore its burden of proof quite well, blowing past my expectations. The beef was a flavorful medium-rare, served slice-it-yourself style, which is my preference. The fries werenāt bad at all, the beans added much needed moisture, and the sweet plantains were a perfect compliment to this savory-forward dish. And whoeverās idea it was to put an over-easy egg atop rice⦠oh ya, itās pretty nice š A few vegetables were a nice way to freshly furnish a dish sourced from the Andean highlands. And finally, the Curtido (green sauce) deserves a comment. Itās a lightly fermented Cabbage Relishādelicious and spicy, it reminded me of a subtle wasabi. It was also gone by the end of the mealā¦
My fellow foodie tried the soup and thought it was pretty good, but its clear the Churrasco embodies the true character of Chimborazo!
