They no longer have St Louis Ribs!???? I had gone here multiple times this past year to enjoy what I thought were the best ribs I'd had anywhere ever. I ordered the full rack of St Louis style ribs each time and I ate my fill there and brought home the excess to enjoy as snacks or lunch. It was a sizeable portion that spanned the plate it was served on.
I went yesterday 2/22/2025 and was perplexed as I could only find baby back ribs on the menu. I asked the server where they were and he said the menu had changed around valentines day and St Louis ribs were dropped. How can a BBQ place called "Pig Stand" not carry what I think is the most popular cut of ribs??
I ordered baby back and it ends up now being a platter with sides even though described as a 'rack'. It's not a full rack. It was about 1/3 the size of what I was accustomed to with St Louis rack I'd previously gotten. The price of the St Louis racks was just under 30.00 and this was around 23.00 so it was 7.00 less and included 2 sides. But it was not what I wanted and I do not think I will return now, I will have to seek out another place that serves St Louis full racks, until I hear they are back, if so. Management-listen: You are losing business!!!!
While I was there I heard our server explain to two others they no longer had St Louis Ribs. So it's not that they aren't popular. My guess is it simplifies inventory, and due to the size of the downsized portion compared to St Louis Rack that was at a higher price, it must offer a higher profit margin for them. But there is no profit if your customers go elsewhere to get this BBQ Staple! PLEASE bring them back-talk to your servers and see which customers asked about St Louis and follow up with them to see their opinion on what they ordered and ate before they leave-you have an opportunity to save those customers like me who will now just have to go elsewhere! Your previous ribs were superb-thick, meaty and at 29.99 was a good value that yielded take home portion after the meal-so I went and would go frequently. Your sauce is also the boss-one of the best I've had. I am disappointed I can no longer get them. The corn pudding and collards I had with it were excellent. Your food is good/great. If you're on the hunt for incredible barbecue in Florida, Colt’s Pig Stand in New Smyrna Beach is an absolute must-visit. After trying a few barbecue joints across the Sunshine State, I can really say: SO FAR this is hands-down the best brisket I've had to date.
At Colt's, you're given the option of regular or marbled brisket, and both are fantastic depending on your preference. The marbled version, in particular, is rich and tender, yet never greasy. The brisket here is always savory, incredibly tender, and perfectly cooked—not overly smoked, not dry, just barbecue bliss. It’s a textbook example of how brisket should be done, and you can tell that this place takes serious pride in their smoking process. It reminds me of Texas brisket, and that's a mouthful!
While the brisket is the star of the show, the smoked barbecue chicken is also excellent—juicy, flavorful, and nicely seasoned without being overdone. Their pulled pork, pulled chicken, and smoked sausage all hit the mark as well. Everything I've tried so far has been consistently good, and you really can’t go wrong with any protein on the menu.
Serving sizes are generous, ranging from $20 to $25 per plate, but here's the kicker: each plate easily makes two, sometimes even three full meals. You’ll leave full and still have plenty to take home. Meals come with a couple of well-prepared sides (the mac and cheese is a personal favorite) and your choice of Texas toast or other equally delicious bread options.
The staff is always welcoming, friendly, and quick—from the moment you walk in, you’re greeted and seated efficiently, and service stays fast and attentive throughout your meal. The restaurant is also consistently clean and tidy, from the floors to the restrooms, and the atmosphere strikes a great balance between casual comfort and southern charm.
My only wish for Colt’s Pig Stand? Wi-Fi. It would make the perfect place for a casual lunch meeting or remote work session. But aside from that one tiny detail, I honestly can’t find anything else for a wish list.

Read moreA review can only do so much, but I figured I would give it a shot anyway. The service was disgraceful. The waitress who took “care” of our table completely ignored me. I literally sat down with a smile on my face and she literally wouldn’t even speak to me to get my order. She was extremely nice to my husband and had decent interaction with my grandmother, but with me it was like I did not even exist. It was insane. I know often times people will write reviews where there is more context to the story then they let on, but when I tell you this was the most bizarre experience of my life—it really was. She came up to our table while my grandmother was still eating and advised that she needed to cash our table out as she was rotating to a different area. My grandmother, who was paying for the meal, almost choked on her food trying to get her card out to pay. When the waitress left our table, her and I locked eyes across the restaurant. She gave me the nastiest, most hateful look and then her eyes darted away. I will reiterate—I don’t know who this hellion is/was but she made the whole experience rotten like her attitude.
