Good Trouble Food Lab — Restaurant in Old Bridge Township

It was only the second day of operation so some of the issues I imagine will be ironed out over the next few weeks. Service was great, everybody was friendly, the bathroom was clean and the inside of the shop was quaint and cute. Very limited seating and the line was building towards the lunch rush. I highly recommend ordering ahead online as it seems like a large order came over and slowed down the kitchen for walk ins. The walk in line waited for some orders to clear before taking more they were making but online orders were still coming in.

I got there before noon and they were out of the Cuban. Multiple sandwiches cannot be changed and ordered/served only as the menu states, understandable once you see the setup (some sandwiches have a gluten free wrap option).

As for the food, my chopped Italian was good, meat was of good quality and the bread is nicely toasted for a noticeable crunch on the outside. It didn't blow me away and was lacking some meat for the price. My wife has yet to eat the Jive yet but seemed to have a more healthy amount of meat. The coffee lavender was very subtle and more expresso was very tasty. Now the baked goods!!!!! STAR OF ORDER, cookies and brown butter rice crispy squares stole the show, easily added an extra star if only comparing the location to true jersey delis in the area.

I think this place has major potential as the menu and operation is refined, don't skip the baked goods! Also don't expect a quick in and out experience if you limited...

Absolutely excellent experience and an incredible addition to the Old Bridge area. Wife and I sampled a little bit of everything from each part of the menu. Sandwich wise, we had the Cuban and the Italian Beef. Both sandwiches were excellent, but the Italian Beef is firmly a top-5 of all time for me. It had such a rich beefy flavor and the housemade giardiniera had a beautiful kick and tang. The au jus for dipping was the best I've ever had in both taste and texture. It coated the sandwich and was not runny. Such a great detail!

Such a great spot! The staff was friendly and upbeat, and the place itself is super cute with a great vibe. We shared the Thai Tuna BLT and the Cubano — both sandwiches were absolutely delicious. We also had a chocolate chip cookie, the rice crispy treat, and un Cafe con Leche. Everything was fresh, flavorful, and clearly made with care. Can’t wait to go back and try more sandwiches!
