Four Seasons Palm Beach what's going on? This doesn't fill the fine dining bill the PR firm put forth.Florie's is an insult to your brand. I can't believe Michelin starred MAURO COLAGRECO is apparently not paying any attention this dining establishment One Google * overrates ii! This place servea 3rd rate, poorly presented, over priced, over cooked food, but some how cold upon arrival at the table EVEN on a very slow night. I'll will give the the beautifully decorated space and the Bar, the fact that the table was quiet the single Google star. (the word must be out Thanksgiving week the Four Season's at near capacity and the place was empty
Start with a waiter's presentation of specials, his accent was so heavy not one of us understood him, however, we did order two of the "what did he say" specials. Oysters, a variety I've never seen before, they were so tiny they made Littleneck clams look giant size. They were topped with a droplet of tasteless white glop, none of the brine left in the shell, one word description, uggh. Next came the tiny cold baked clams. We sent them back and when then they reheated them we were presented with burned breading over hard slugs yuk! Great start! Snapper arrived overdone and cold!. We realized sending this fish kitchen back for reheating would result in shoe sole texture which was already over cooked. (You should have thought the waiter would have dealt with the situation, it remained on the bill. (making a scene with special guests was not a consideration) Someone should clue in "truth in menu police" guess what guys, Cippino is made with a tomato base broth not white sauce. It was passable, just not as anticipated as was the Yakatori dish. I could go on but space is limited This place exists only due to it existence within a wonderful Four Seasons Hotel. Fine dining means more that charging a $100 per person. MY advice would be if your a hotel guest (I live here) forget about this spot and if you really want a special evening there are many excellent Palm Beach fine dining establishments available - I'd suggest Cafe Boulud, Buccan, Renatta's Chez Jean Pierre, Café L'Europe, , just to name a few of our favorite in this price range. 2ND VISIT WOW! This was our 2nd visit and it turned out to be an absolutely a 180 turn from disappointing prior review Thanksgiving week. From * ti 5*s a top 10 meal. Contrary to our first visit the service was perfect; attentive and friendly, but never intrusive ; Start with WELL. When the waiter asked for her selection, her reply - " you know what the kitchen is doing best tonight. You pick for us" Ok that's a first for but ........ Not knowing what to expect - a crisis? What wine to select? Whereupon the Sommelier appeared she'll pick a glass of the perfect wine for each course and Jessica Altieri's selections were spot on! Each wine matched perfectly! Starting with the local Burrata and Heirloom tomato & Persimmons, two delicious starters! Next came Australian Wagyu OMG it was a taste bud orgasm, melted in my mouth followed by truffled chicken crispy skin smothered with truffles and salt baked fish Perfecto! .... Deserts Don't ask...

The staff is always “ good “ - the food is always “ good “ - everything is always just good. The staff knows that most likely they will never see the guests again - the cooks and the chefs know the same…the manager will always politely smile and most likely not remember the guest unless the guests are regulars at the property. Everything is different with Flories. In my humble opinion - this is the best kept secret in Palm Beach. We had a hand full of wonderful local restaurants a few years ago, fortunately / unfortunately, we’ve gotten a number of new comers who are trying to out do each other and be the best they can be to the local community…Flories isn’t playing by those rules. Since their opening about 5 or 6 years ago or so - they never looked at competing eateries to try and take business away - they never took inspiration from local menus to try to serve the same but better product - they simply built a rock star team and did their own thing, and they are absolutely fantastic at it! Sure - I hope this review can validate the quality of the restaurant to the Four Seasons guests, but my point of writing this is really for all of our local friends that are stuck going to the same old places habitually. First off - Vincent ( the GM ), was BORN to run a restaurant and hospitality is in his blood. I’ve yet to dine there or ever go for a drink - without him treating me like I am the most important person he’s ever had at his restaurant… and I am a nobody. Money can NOT buy hospitality like that. This weekend, my wife and I had the pleasure of dining there once again - and I just had to say something in a review - which I rarely do: Our server was Marcus - who, just like Vincent did not skip a beat in regards to hospitality…the dude CARED for the product he was serving, along with the integrity of the business and most importantly for my wife and I. Sure - he is a tipped employee - but you could tell it wasn’t about the tips, it was about providing us with the most wonderful time. I do have to mention Ilphonse - I believe he was a food runner…just like the rest of the team - he was truly wonderful and I wanted to adopt him as my new best friend! As far as the chef and the kitchen staff… I won’t saying anything apart from WOW! If I start going into the dishes and how great everything was - my fingers will fall off from typing. I guess the point of the story is: Flories an all around the most underrated restaurant for the locals and deserves much more local recognition then it has. If you are a local and actually took the time to read this whole thing - please do yourself a favor and stop in there for a nice dinner or even just a cocktail. Read moreDinner at Florie's was incredibly special. Full disclosure - my sister is a cook there, and my family has been exceptionally proud of the accomplishment of working there. We went tonight to celebrate her at her place of work, and were blown away by the quality of the service, the food, and the atmosphere. The service was warm and genuine, and extremely attentive. Haci was a warm and personal maître de, and oversaw the wonderful team of Georgina, Orin, Mark, David, Tatiana, and others whos names I could not catch quick enough. Thank you for the prompt service, thougthful recommendations, and warm banter! The FOOD - I was extremely impressed with the amuse-bouche. The cucumber-salmon-dill combo is a classic, but the temperatures, colors, textures, and flavors were played off each other in a contemporary, special bite. I cannot recommend the beet carpaccio and smoked king salmon appetizers enough - the goat cheese on the beet carpaccio was perfection. Thankfully, I can report on all tasty mains ordered at the table - the pizza tasted like a proper Neapolitan pie, the local tandoori-spiced grouper was cooked to perfection, and the pumpkin pasta was a delightful treat for the eyes (the butternut squah balls and parmegiana crisp were playful and tasty!). After sharing such a meal, we thought we couldn't eat any more, but the dessert buffet was offered to us. . .and I hope every other patron enjoys it as well. The chocolate coulant was out of this world. I'm not a massive chocolate fan, yet I found myself going back to this dish again and again - the warm cake with fragrant tonka bean ice cream was insanely good. My mom obsessed over Chef Nino's speciality white chocolate mousse, and my brothers devoured the profiteroles. Chef Nino came to our table, and we were grateful for the opportunity to meet him, and thank him for the wonderful meal as well as the team, culture, and atmosphere created in the kitchen. He went above and beyond, and offered us a tour of the kitchen! It was exceptionally clean; everyone on the line moved seamlessly around each other. It was clear to see that the incredible team behind the counter is what makes the dishes come together splendidly! To wrap up this (very long) review - visit Florie's, and you won't be disappointmed. It won't matter that your sister isn't working in the kitchen, I'd bet the team makes you feel like part of the family before...
