As a longtime chef, former restaurateur across multiple states, and a local to Paris, I have to give the team at Cielos a standing ovation for their opening night. Sure, there were minor grand opening hiccups—things like not clearing extra place settings and delivering the wrong receipt copy—but those were tiny details, completely overshadowed by the impeccable hospitality training our server showed.
The bar was absolutely stellar. The menu is well-designed, execution is spot-on, and service is fast. I ordered a favorite I get wherever it's available - the smoked Old Fashioned, and let me tell you—seeing a cocktail smoked tableside in an upscale Paris, TX restaurant is something I NEVER thought I’d witness, and it was a very welcome touch.
Now, onto the kitchen. The chef is putting in a strong effort, and while the menu isn’t breaking new ground or particularly cohesive yet, the execution is solid, and the speed is impressive. I kept it light and tried two items:
Charcuterie Pretzel Appetizer – Fantastic flavors, great fruit selection, and a delightful truffled cheese. The spicy jam was a standout.
Fig & Prosciutto Pizza – A classic combo I’ve had many times. The crust was perfectly cooked. The prosciutto? Not so much. Instead of delicate slices, it came in 1/8-inch thick, fatty chunks that chewed like bubble gum. Whether it’s being cut by hand or a supplier issue, this isn’t a learning-curve mistake—it’s a misstep that I’m confident they’ll correct. A switch to paper-thin, julienned, crispy fried prosciutto would be a game-changer. Also, swapping the hot honey for a fig-infused balsamic glaze would elevate the whole thing—but that’s just me.
The atmosphere is another win. Thoughtful lighting, perfect noise levels, and a clientele that suits the space. Plus, those west-facing windows display unbeatable sunset views.
It’s clear that Cielos is bringing a much-needed level of hospitality and service to Paris—executing at a big-city level from day one. They complement other pioneering businesses in town that are pushing Paris forward, and I hope they inspire others to elevate their game.

First off - First date night since we had our newborn. So we had to indulge alittle.
Elk Tacos - Tasty, delicious, and I haven't had Elk since I was in colorado. So AMAZING. Portion is a appetizer appropriate portion.
Drink wise - Old fashion in a smoke box. I love to smoke my old fashions at home, but this was another notch on top of it. I loved the show, and it was a fantastic old fashion. Huge fan of it.
Lavender lemonade was for my wife - and it was sweet for me. However, very tasty and delicious. I would recommend it to for a mid summer drink.
Finally, the food. I had the scallop risotto - and risotto is something I make on a weekly base. The was perfect, creamy, tasty and rich. The scallops cooked/seared well.
My wife had the pecan crusted chicken, which wasn't as good as the risotto. Still, an amazing dish and absolutely crusted well.

Our first visit was today at 11:15am. I usually like to test out a new place on a meal with challenging technical aspects, so I ordered the Pan Seared Scallops and Risotto. My wife ordered the Cielo Burger. Well, if you put your name on a burger, it better be good. It was not. It was; cold, dry as a bone, and looked more like a slider than a burger. 71 years on this earth, and I've never had a burger that bad or that dry.
