Can't say I had any expectations from Kenbu. I do like the fact the ratings are very high...deservedly so I can confirm. I still find it a bit odd that one can get such delicious high quality food at a food cart. The ingenuity of Oregonians...kudos!!
~ PARADISE B-ROTTO - 5/5 Hand's down my favorite item I tried so far. This is what I envisioned a Sushi Burrito tasting like. I've been disappointed before at several other Sushi Burrito fusion concepts. Kenbu knocked it out of the park. It's not big, but it's put together rather well. All the ingredients, the Eel, Salmon, Crab, Avocado, and Cucumber tasted really fresh. The spicy sauce gave it a nice little kick without being overly spicy.
~ SPIDER MAN B-ROTTO - 4/5 My friend's kids love this "B-ROTTO" I thought it was good, but not my favorite. Very well done, the Tempura soft shell crab is cooked to perfection the crab, avocado, cucumber, green leaf tempura crispy with spicy and eel sauce just make this a delight to chow down.
~ PANINI - 4/5 Very interesting. This wasn't on the menu at the time of my visit. My friend had it before and literally asked them to make it. It's not a traditional Panini. There is no bread on this one. It's looks like it could be Keto friendly...but I think there is rice in it. Just don let get cold, it gets soft and rubbery. Engulf when warm...you have been warned.

The rice had obviously been refrigerated for a long time. It was crunchy, cold and as far as I could taste, completely unseasoned.
The rolls were sloppy, loose and haphazard. Toppings falling out, rolls unraveling, rice falling off the nori!
and for the california roll I am pretty sure they used a press or machine, based on the hard, square, compressed brick of rice that I was served.
The must not have been toasted before use. (Why the rice would not stick). The nori then was tough, hard and chewy.
No vegetable was ripe, the avocado hard.
In these ways though it was at least interesting. It was basically a master class in everything you don't want to do when making sushi.
The edamame was good enough, but that's thanks to whatever company flash froze it for them.
Absolutely don't eat here. If your items are anything like what I received I guarantee you will have wished you just bought sushi at your local grocery.(or...
