An unusual trip, thru the senses with Emma @NASO.pdx in Portland
When you go to NASO, look for a tall drink of water named Emma, the proprietor and Guild Certified, Level 3 Sommelier - I learned after asking a few questions. Like, how do you know so much about all of this?
Emma's knowledge ALL about some of the finer details concerning food & drink is expansive.
I have only met 1 or 2 people (i'm 70) with a true pallet; it's like perfect pitch, a few people have it. The sense of taste and smell is accentuated in these genotypes.
Aside from the warm atmosphere, the gorgeous assortment of retail items and a curated bottle selection for takeaway - there are special plates and pairings offered for the famished.
There's something about Emma's combinations and pairings that speaks to alchemy. Smell is the only sense that can actually modify the brain (olfactory bulb), on impact. SO, who knows what can happen.
