Mi Ranchito Family Restaurant — Restaurant in Rock Springs

This is a nice place off the beaten path in Rock Springs to sit down and enjoy some good, but not great, Mexican food. The service is fast and friendly. The bar has several screens playing a nice mix of upbeat Latino and Mexican music. For starters, you are provided with a basket of warm, fresh, flavorful and non-oily chips with a dip of refried beans and a nice red salsa with a delicate hint of cilantro. For the main meal, I ordered the chili verde and a side of one chili relleno. The chili verde gravy was pleasing with good green chili flavor and large chunks of pork. However, the pork was over cooked, dry and chewy.

The chili relleno tasted great, but it was served very soggy and whatever crust had been added by the frying was lost. I can only think that the chili rellenos must be prepared in advance and then kept warm in some type of steam heating device for serving...

The best Mexican food I’ve had in all of Wyoming and Utah! I was just driving through on my way to Colorado and I’m so glad I stopped here. It’s authentic and they give you large portions of food. I ordered the special molcajete mi ranchito and it was absolutely wonderful. The chipotle sauce is slightly spicy and deeply flavorful, the chicken was tender, the shrimp was huge, and the carne asada melts in your mouth. On top of that, it came with a deliciously roasted jalapeño and cactus (which I’ve never had before). It was so good, and on top of that they gave us chips, beans, salsa, and cotton candy on the house! Huge fan of this place and I’ll definitely be stopping here again if I ever have another trip...

Incredibly disappointed 😞. I was really excited to find a location here while I was traveling through. They have a Colorado location that I dream about The food! The food and service was always above and beyond there. The Rock Springs location was way under par in everyway. I may have looked a bit rough cause I'm on my way back home from a week long camping trip....but my money spends the same and I have plenty of it. They treated us as if we were going to grab the bags and run or something. The food was way over cooked and dry. Our order was wrong even after we went in to correct it. They were too busy judging our appearance instead of listening to our order and showing us hospitality. Lesson learned,...
