Great food, great service, we will be back! Stopped by for the first time yesterday evening. We've been to the other locations that are also owned by the same folks; Cancun 1 in Fenton and Cancun 2 in Linden. I live in Linden and used to live in Fenton. I've been frequenting the two Cancun's since each opened. I was happy to venture down to Saline to try the newest addition to the family, Jalisco.
When we arrived we were greeted promptly by the host and seated immediately. Happy to try it out on a Wednesday evening, wasn't busy at all. After being seated we were given hot chips and two little cups of salsa, one for each of us, which is perfect, we usually have to ask for more.
When the server, Sharon, arrived she was friendly and took our drink orders. We each had a medium margarita on the rocks with salt. They were huge, a little sweet for our taste, but still good. We ordered fajita quesadillas, one steak and one chicken. If you haven't had these, this is the place to order them! They are delicious. The meat is stir fried with peppers and onions and seasoned well. Comes with rice but we substituted beans. The beans were thick and hot with some melted cheese on top, we liked them. Also added some fresh jalapeño's, we like it hot and it was all so good.
We mentioned frequenting the other locations to our server, Sharon, and how excited we were to try this one. We asked her about training and if she knew the folks from the other locations. She was so sweet and we chatted quite a bit about the owners and staff. To our surprise Raul, co-owner, was working and came out to meet and greet us. He was very nice and we chatted at length about the new location, the staff and the furniture and decorations. He and Memo from Fenton did a lot of the Mexican design, arches, stucco, etc., it looks fantastic. And the furniture is beautiful and so authentic, because guess where it's from ... Jalisco, Mexico!

Jalisco in Saline has become our go-to restaurant for consistently excellent Mexican food and service. The restaurant maintains clean, welcoming conditions with immaculate tables that immediately put you at ease.
The service here is outstanding and remarkably consistent every single visit. The staff is attentive, friendly, and efficient without being rushed. We've never had a bad service experience, which is rare for any restaurant these days.
The food portions are generous, particularly the Molcajete meal, which easily serves two or more people. The quality matches the quantity - everything is fresh, flavorful, and well-prepared. We appreciate that they carry non-alcoholic Corona, which is a nice touch for those who want the authentic pairing without the alcohol.
As someone with food allergies, I've been consistently impressed with their approach to allergen safety. Since they opened, I've had zero allergy issues here. The staff is knowledgeable and transparent about ingredients, and they're genuinely supportive in making sure I can eat safely. They take food allergies seriously without making it feel like an inconvenience.
The location near the movie theater makes it perfect for dinner-and-a-movie nights. Even when we're in a rush before a show, the service is always quick and efficient without sacrificing quality. When we know our order ahead of time, we can easily get in and out within 45 minutes with time to spare before our movie starts. It's rare to find a restaurant that can consistently deliver both speed and quality.

After giving our drink order (soft drinks) we waited 20 minutes and still nothing. I finally stopped someone and asked where our drinks were. After getting our drinks we then waited another 20 minutes to order food. After flagging our waitress down to order she thought we already ordered with our menus still sitting in front of us. We then waited another 45 minutes for our food without even being checked on to see if we needed anything while waiting. We got 3 out of the 5 meals and the waitress forgot to put in the other 2 meals in, one of those being my 2 year old sons meal. We had to clean out a salsa bowl and share some of the rice that was at the table so my son could have something to eat while he waited for his cheese quesadilla. He did not get his meal until 8:30.
