Bibo's NY Pizza is a solid choice for a quick and casual pizza fix. It's located conveniently in a strip mall with plenty of parking, which is a major win in San Jose. Inside, the vibe is chill and family-friendly. They've got a few arcade games, and there are TV screens tuned to sports.
I was seated immediately, and the service was fast throughout my visit. They offer both indoor and outdoor seating, with the covered patio being a nice option for enjoying a slice al fresco.
Of course, the star of the show is the pizza. They offer pizza by the slice, which is perfect for trying different combinations or grabbing a quick bite. You can choose from their pre-made slices or design your own custom masterpiece. I went with a classic pepperoni slice and a white pie slice with ricotta, mozzarella, and fresh basil.
The pepperoni slice was the real winner. The crust was exactly what you'd expect from a New York-style pizza: thin, crispy, and hand-tossed to perfection. The cheese was fresh and melted beautifully, and the pepperoni itself delivered that perfect balance of salty, savory, and slightly sweet flavors. It was a symphony in every bite!
The white pie slice was decent. The ricotta and mozzarella were fresh, but overall it lacked the punch of the pepperoni. Maybe a drizzle of olive oil or a sprinkle of red pepper flakes would have taken it up a notch.
Overall, Bibo's NY Pizza is a 4-star experience. It's a great spot for a casual meal with something for everyone. With its friendly atmosphere, fast service, and delicious (especially the pepperoni!) pizza by the slice, Bibo's is a solid option for a satisfying and fun...
Read moreYesterday I really got the craving for some NY style pizza so I looked around and found Bibo's and gave it a try.
Service is great and the staff is very friendly. The atmosphere of the place is cozy and small. A family friendly place where you can dine, enjoy some beers and laughs.
For all the great things it has going for it though, the NY style pizza is not one of them. Now this could have been my choices of the pizza slices that I chose, or the time I came around, but the NY style I was accustomed to for 13 years of my life was not something I was able to relive. The pizza has partially the same style as a NY pizza meaning is flat, you can fold it and it does not sag. Besides those qualities, the rest was meh. The pizza itself was more like a thin crust style pizza then NY.
Another downer, any New Yorker will tell you that a NY pizza has a quality for folding, not sagging and above all no grease on the bottom. None. This pizza, first 2 great, but on the grease department, it was disappointing. Probably I should have chosen cheese or pepperoni to see instead, but I think the outcome would be the same. When folding a NY style pizza grease would always drip from the top of the pizza. It would never sip through the dough and saturate the actual pizza dough. Last, but not least taste, this was also meh for me. It definitely did not trigger my NY taste buds. There is something about the cheese, the sauce and the dough that make a NY style pizza very unique and for all the places I've tried in the Bay area, not one has come close to provide me...
Read moreBibo's is hands down my favorite NY style pizza restaurant in San Jose! In my opinion they're much better than the other super popular store here. I've been to NYC and I guess what they said about the NYC tap water is true because yes, the pizza there is tastier. BUT Bibo's comes really close!
Food & Drink: You can purchase slices, or whole pies at around a large and extra large size. I don't know why but the extra large size comes out tastier. They have premade options and you can also customize your own toppings if you prefer. Their toppings are very fresh. The cheese and sauce are great. Crust is perfectly crisp! I also love their cheese breads - both ranch and pesto are delicious. There are a lot of interesting beer options here as well. Local options, popular beers, and beers on tap are available. I love trying something new every time I'm here.
Interior: There's a bar, tvs with sports playing, a few tables, and some old school arcade games including pinball. Lots of people come here on game days.
Exterior: There's a cute outdoor patio with a pretty good number of seating. The patio is lit up and is a really nice spot to eat at when the weather is nice.
Service: Everyone is very nice and friendly! I usually do not wait over 15 minutes, but on a very crowded day you can expect a slightly...
