A great local bakery that's worth the wait!
61hundred Bread is located in a new section of Santa Ana filled with new shops/eats. We usually get there around 9-10AM and the line has been as long as 45 minutes (January) to as short as 20 minutes (April) so your time may vary. We found the wait to be not bad at all with a lot of friendly people in line. And sometimes, the staff comes out with samples which is always tasty and welcome.
Getting into 61hundred Bread, you'll have a small breather seeing all of the pastries available on the counter as well as all of the workers creating all the lovely pastries. You'll usually see the sourdough first followed by the sweet pastries and cookies/smaller items at the end. Coming around 9-10AM, did want to note that usually 1-2 items were sold out by that point (like the Japanese milk bread).
Our favorites include: *Pain au chocolat *Croissant *Sundried tomato croissant *Focaccia *Sourdough and blue corn sourdough
These were all excellent and baked really well. We use the sourdough for all sorts of items at home and was great with wine and cheese nights.
We personally didn't enjoy as much the ube cruffin and the cookies so far. Just a bit too sweet and not as strong as the other pastry options!
My one early negative was that the coffee was a bit so-so, but it looks like the bakery is addressing this with an expanded barista menu with more options. My friend recently got the latte and said it wasn't bad and need to try it out myself as well.
They had some other items as well to the side such as wines which were a neat touch.
Right outside there's a small seating area as well as in front of the bakery where there are usually spots available. Parking isn't too bad usually as well with street parking on adjacent streets usually our best bet to finding something.
All-in-all, really happy to have 61hundred bread around the area! Glad to have tried it a few times and can't wait to come...

I never thought a croissant could make me want to be a better person. That’s how I felt after finally getting to try the Oaxacan cheese, sundried tomato, chili garlic croissant. I imagine that’s why everyone on the team is so wonderful, friendly, and has this radiating glow to them. Maybe that’s just the great lighting and the cool location they’re in. Shoutout to the young man that mentioned it last week when they’d run out.
Everything else they make here is also out of this world incredible. Literally everything. Really really! The Ube cruffin supremely smacks. The Blue Corn sourdough = so so good and a very unique flavor we made the best sandwiches and grilled cheese with that. The Sourdough dolce focaccia and pan de sal were also delicious.
Supremely underrated! With lines out the door when they open and only 7 reviews so far, clearly this place is being gatekept by those who wish to hoard all the perfect moments for themselves. Be glad you discovered this place before Portnoy and Keith Lee do and give it their highest ratings ever.
Such a special place and I love that they mill their own flour. We are lucky to have people who love their craft as much as these folks do. There is so much great food happening in OC and particularly in Santa Ana and I feel very grateful to get to experience it.
When historians look back at what happened in late 2024 to bend the arc of history towards world peace and justice they might discover 6100 Bread and the Oaxacan cheese tomato croissant to be the origin event.

Read moreI saw an interview of this place on Facebook reel and since I was in Santa Ana decided to stop by and check it out. First off parking can be challenging as it backs up to a residential area. Be aware of the parking signs and if permits are needed. The bakery is small but the items available are delicious. They do offer coffee drinks, hot and cold, that go with the pastries. We enjoyed a cinnamon roll, not pictured, that was really tasty. Not your normal cinnamon roll as it was flakey like a croissant but the cream on top was more like a buttercream topping. I really liked that it was different in a good way. I did buy a loaf of bread, as the interview I saw recommended it, and some other pastries for the week. The employees there were incredibly nice and offered tweaks to their items. I ordered a hot matcha and was asked if I wanted a vanilla syrup or a simple syrup for sweetness. The places I've been to never asked me that question before, so I got the simple syrup added and it was perfect. Just enough for a bit of sweetness but not overly sweet. They did have refrigerators and I noticed cans of beer from Flashpoint Brewery and some custom flavors of butter. In all if you are in Santa Ana I would recommend this bakery.
