Buyer beware!! I've been to this gavilan location four times. The last two times the staff particularly the girls behind the counter were rude and pushy. After waiting my turn in line twice the girls behind the counter had nerve to rush me to place my order and it's not as if I was taking a uncommonly long time either. But I reserved judgment since this is one of the few places open till midnight and I figured this place was hit or miss as far as the quality of service. I normally grab three or four burritos and a couple tacos every time I visit and the quality of the meat has never been great but tonight two of the lengua burritos had long grey/silver hairs in them and not just one but a couple strands each. And to top it all off the meat itself was extra tough and gross.
We tossed the burritos after noticing the hairs in them but unfortunately the couple bites we took before noticing the hairs were enough to cause us to have indigestion. Laugh all you want but no kidding my guts are bubbling as I'm writing this. And no I'm not embellishing, adding too much or exaggerating. Absolutely disgusting experience and I felt terrible I served my family food like this. My mom had to pull the hairs out of her mouth after taking a bite out of her burrito.

Tried the ak pastor, carne asada, and chorizo with a bottomless drink (includes choice of soft drink or aguas frescas). Noticed that the restaurant was very clean and workers would go about picking up and wiping down tables quickly after people left. There was a pretty decent crowd, perhaps half full. Order came out within 5 minutes. Very surprised to see beans (not refried but de la olla style) within the salsa bar. It included you standard red (spicy/smoky), green (medium/tangy), green with onion chunks (spicier than other green), chopped mixture of onion and cilantro, stewed beans, grilled onions, and pickled jalapeño and carrots. Well stocked small to-go containers and utensils found within reach. Inspected the food and surprised to see freshly made double corn tortillas with a very good amount of meat. It was enough to cover the entire surface of the tortilla. Once I added all the fixings they made really filling tacos. The tortillas were soft and not under or obviously over cooked. Carne asada lacked a little flavor, al pastor was very good, but the chorizo had by far the most flavorful and paired excellent with the beans. They have a good selection of different items: tortas, mulitas, sopes, nachos, etc. Prices are not outrageous, tacos costing $2.30, but you don't get much for it. We got pollo and carnita tacos, which unfortunately were dry and unflavorful.
While they have a salsa bar, everything is packaged into plastic bags. The grilled onions and beans are not but everything else is factory packed. Definitely not something you see don't everyday and gives the illusion that this is not fresh food despite if it is or not. I personally am not a fan, but some may not mind. The salsa itself was fine, again does it's job but nothing amazing.
Inside, the dining space stands out as it's clean, open, and welcoming. The service itself was fast and attentive. Great for bringing families for a quick meal.
It's not terrible but it feels like Americanized Mexican food. A nearby taqueria will have better food but like McDonald's it stays consistent if you find one...
