Fusion Fare is one of our new go-tos downtown! Everything we’ve tried thus far has been absolutely fantastic. They aren’t lying when they said the stir-fried eggplant is “the best eggplant you will ever have,” it’s crispy crunchy on the outside and fluffy on the inside in a sweet and tangy sauce. We also got the braised beef noodle bowl, the beef was so tender and spiced and the broth was rich, complex, and spicy! The garlic yu choy was perfect to cool down from the noodles. All vegetables should have that much garlic. We can’t wait to eat our way through the menu, the staff were so helpful with recommendations and almost everything can be made vegetarian or even vegan! Even items not listed so if you’re a veggie just ask.

Despite the cashier and menu at the front, all ordering is via QR code and utensils and dishes are all self serve. The staff bring the dishes to you but it’s nice to help them out by busing your own table when you’re done. Indoor dining only. Credit cards and Apple Pay accepted.

Everything was hot, flavorful, and ridiculously good. I wasn’t just eating—I was having a full-on flavor moment. The kind that makes you close your eyes after the first bite and whisper, “Oh my goodness!!!!"

The food came out steaming, the flavors were bold but balanced, and every dish had that “just one more bite” energy (until I realized I ate the whole thing). They’re clearly not afraid to play with spice, texture, or creativity—and it works. The chef and owner is super sweet and I can feel his passion for food in his cooking.

Fortunate to find Fusion Fare! Earlier this week we gave Santa Cruz’s new Downtown restaurant Fusion Fare. Owner Chef Mo is a classically trained Professional Chef applying inspired variations of Sichuan dishes, and the results are amazing! We tried the Chicken Coconut Curry (deftly seasoned), Crispy Pepper Chicken (fried to perfection), Stir Fried Eggplant (so fresh), Sesame Lotus Root with Vegetables (beautifully prepared), and a crazy fun spin on Mapo Tofu (adding Mozzarella Cheese!). We also had Sautéed Duck which showcased what Fusion Fare is really all about; all their dishes were seasoned to perfection! Plenty of Vegan options and Student Friendly! Open Late. After a long day at the Boardwalk, we stopped by Fusion Fare for a late dinner with our family of five—and we’re so glad we did! Even close to 10 PM, they were still open, and we found street parking quickly.

The food was phenomenal. We ordered the chicken dumplings, black pepper fried rice, sweet & spicy noodles, kung pao chicken, and the beef noodle bowl—every dish was fresh, flavorful, and perfectly cooked.

What really stood out was the warm and welcoming service. The hostess was incredibly friendly and even joined us for a quick round of Down by the Banks, which made the experience even more memorable.
