Black Willow Food Truck-Catering — Restaurant in Springfield Township

I am giving this a 5 star because I do think it can be amazing and would hate to lower the score over small trivial taste things that can easily be fixed. I went here and tried multiple things. I preface this with I am Mexican and have eaten in a lot of places in Mexico and Southern California.

First the ones I have no notes on. The black bean taco, the angry bird, and even the regular birria taco. All were very tasty.

The Birria Ramen was ok but I think if it had less cumin and more of a flavorful pepper like Guajillo and ancho it could be elevated without the almost taco bell seasoning flavor in the broth. If those are already used, then just overall less cumin because it overpowers.

The corn cup was good but I just wish it had more of the corn soup/broth, a little butter, and less mayo. Traditional mexico corn in a cup uses butter instead of mayo. The butter goes significantly better with lime and chili powder than mayo. Again, a nitpick that maybe locals dont agree with but if you try it, its a better tasting treat.

Sorry if this came off as snobby. I did enjoy the food for the most part and absolutely will support next time I visit the area in a few weeks, I just believe in continuously trying to improve flavors in food. I can see this spot...

Our guests couldn't stop raving about how incredible the food was. In fact, many guests said they had never been to a wedding with food as incredible as this. We loved how they were willing to try something new and do tableside service for our special day - it added the perfect touch to our already amazing day. Bryan and his family were incredibly professional and worked seamlessly with our other vendors to ensure everything went smoothly. We highly recommend them for any event and absolutely can't wait to visit their truck again soon!

So I got the nachos. My husband got the Birria ramen food wasn't bad but was not worth the price. The ramen she said to let cook in the juice marinade for 5 minutes. We let it sit for 10 in the noodles still didnt cook it wasn't hot enough. It had an okay flavor . The nachos you got a big amount but wasn't very flavorful and the only protein options was pork or black beans. Would I ever ever eat here again?
