I had been telling everybody about this place since I had heard it was being built. The concept was fascinating and I am always excited to see Springfield get some new and exciting eating establishments. However, I was a bit disappointed. For starters, it’s a great location and a really neat building. The utensils and decor are a bit millennial Amazon. The cocktails were a bit underwhelming. Not very authentic nor well crafted. Next the appetizer. We had gotten a variety. The blue crab beignet’s were a bit like Carnival food with no real flare and a bit too fishy. The boudin also tasted like it had been prepared a week in advance. The alligator bites were tough and were hard to differentiate from gizzards. The sauces were the highlight. Then, we had the seafood Étouffée. The shrimp was a bit overcooked. The sauce was wayyy too salty. The rice was tough. The scallops were great though! Then desert, we had the banana foster cheesecake. It was good. Nothing to write home about. Overall, we were both disappointed. Hearing and reading about this place, keeping up with any info and articles. And I don’t think it’s a matter of building it up too highly in our heads, I think we both just objectively think it was a bit lackluster. It needs a little work. And the prices are too high for what is being offered. I HOPE this place sticks around. I hope that they can navigate and maybe help better the existing dishes and maybe even add some different ideas onto the menu as well as investing more into the atmosphere and the cocktails. There is infinite potential, and I can tell the owners/staff work really hard. And I HATE to criticize. I hope to return someday, but as it stands… Not for a while. And not for leisure.

I think this restaurant has a lot going for it. Unfortunately, some of our experience was similar to some of the lower reviews. We came for a special birthday. Our ONE waitress on our floor seemed overwhelmed and was not able to get to us for 20 minutes. The kitchen was backed up. If you sit on the Stone Bistro level, it is a bit loud from the kitchen throwing dishes. We thought the space was very nice, but we felt a little bit like the forgotten table. I don't even know our waitresses name she was so busy and forgot to introduce herself. She was just trying to constantly catch up. Slay girl. You were doing what you could. It didn't look like you were getting much help. Our dishes were hit or miss. Some dishes were bland. My salad was warm...is that normal? Do go expecting a higher price point. You can view the menu online. If you really want to sit on a certain level, I would call to confirm your reservation. I believe I reserved the only table available for our party number on the NOLABar level, but we were on the Stone Bistro level. Did not bother us, but if you really want to sit somewhere...they do have their own vibe. I may go back after some time. Sit on another level and try a different dish. I just think they are working out a lot of kinks and have a green crew. We just went on a super busy night, when it seemed they were understaffed, and we got the luck of the draw to be at the end of a kitchen back up.

I have so many nice things to say about this new Springfield gem! We went with some NOLA native friends and had big hopes. Long story short: we were impressed and delighted, not disappointed at all! We started with the Bayou Board app to give us a taste of a lot of their appetizers. I’m sorry I didn’t take a photo of it, but, seriously everything on the board was incredible. I had the beef medallions which were also our waiter’s favorite, and they were amazing. My husband ordered the Seafood Étouffée and liked it. Their lunch version is only crawfish apparently. The Red Fish was also apparently excellent. The Shrimp & Grits our friends thought was a 4/5. We also got a Muffuletta for the table to share and OMG it was incredible. Makes me want to come back for lunch. Dessert: my husband got the Mousselline which he loved. The bread pudding had SUCH potential but tasted like butane. We couldn’t eat more than two bites before abandoning ship. I am confident they will fix this, though! Everything else honestly made up for the lackluster dessert. The vibe was cool. We sat upstairs and after visiting the middle and bottom levels, we were glad to be upstairs. The bottom level was a little warm and felt stuffy, which was unexpected. Go there and support this business!

Unfortunately we had did not have a good experience. We love Cafe Cusco and supporting local business. Normally I Would not even write a review but I have not been treated so poorly at any restaurant. We made reservations for my son's birthday in the Vault. Family flew in town and this was his birthday dinner. My kids are in there late 20's and I thought it would be a nice vibe. When we arrived at the restaurant we were told that he did not think we would like sitting in the vault. It was busy and loud and we would not get good service. I said we wanted the vault and he reiterated again that he did not want us to have a bad experience, and thought we needed to sit in the bistro. We felt we had no choice, it was very awkward. They took us to the bistro, we were the only ones on that floor. The waitress was clearly not a seasoned server. I asked about the wines as I was not familiar with some. I asked if the Bordeaux was sweet. Her response was " the Bordeaux is a Bordeaux" She proceeded to be very rude. So much so that none of us ordered a drink. We went to look at the vault and it was much nicer, less musky smelling than the bistro. It was not loud and the server seemed fine. As we waited for our food we were all ready to leave. It took some time and the server then had 5 or 6 tables by herself and was struggling. The beignet appetizer was very small but good. After some time two of our four meals were brought. It was at least 5 minutes later before the other two came. We ate quickly and left. I did go upstairs and talk to the manager while waiting for our food. He offered to move us halfway through dinner, that seemed silly. I hope they do well, but be ware they are not anything like a Cafe cusco experience or any other fine dining, much to be desired in...

This was our second visit. The first was for lunch and I must say it was excellent, unfortunately I can't say the same for dinner. We started with the bayou board as our appetizer and overall it was good but not great. As for the main courses all four entrees came out Luke warm at best, they obviously sat under the warmer for quite some time. The red fish was overcooked the only highlight was the sauce. Now for the service, it was awful. Our waiter was non-existent, we had to flag him down to ask for additional drinks. Our appetizer plates were never removed from the table when the entrees were served, in fact nothing was ever cleared from our table even after we ordered dessert our plates sat there. After sitting for probably 20 minutes for our dessert and table to be cleared I got up approached the waiter who was too busy conversing with the bartender and cancelled the dessert and asked for the bill. This obviously pissed him off as he basically threw the bill at me and never returned to the table, he sent the bartender to collect payment. I did ask to speak with the manager to express our disappointment with our meal and service with hopes that she might be able to coach her staff for future improvement, unfortunately she really didn't seem to care.

It is very disappointing that someone can take such care and attention to detail in designing and building a beautiful restaurant and then not care about the food and service. My hope for this being another "Excellent" restaurant in Springfield is gone. I can not recommend this place nor will I be back. Very...
